The Food Service Worker role at Brown University Health is integral to supporting patient and staff health by preparing and distributing nutritious meals within the hospital setting. Under the general supervision of the Food Services Supervisor, the incumbent is responsible for ensuring that meals meet required nutritional standards and are delivered timely with emphasis on flavor, quality, and presentation. This position involves reviewing menus and work orders, planning cooking schedules, estimating food quantities, and preparing a variety of foods including meats, vegetables, soups, salads, and desserts in accordance with hospital guidelines and dietary modifications. Additionally, the Food Service Worker plays a vital role in controlling serving portions to reduce waste, procuring ingredients from storage, and ensuring all food safety practices are strictly followed. Job Requirements
- Certification as Food Safety Manager by National Registry of Food and Safety Professionals
- Knowledge of cooking techniques
- Familiarity with cooking operations and procedures
- Minimum of 2 to 3 years experience in food service
- Ability to work variable shifts including mornings, evenings, weekends and holidays
- Must adhere to corporate values of compassion, accountability, respect, and excellence
- Ability to follow food safety protocols including HACCP guidelines

Job Duties

- Reviews menus and work orders to determine type and quantity of meats, vegetables, soups, salads and desserts to be prepared
- Plans cooking schedule to ensure that food is ready at specified times and that the nutritional quality, flavor and appearance is maintained
- Estimates food quantities and controls serving portions to minimize waste and leftovers
- Confers with Food Service Supervisor regarding modified diet preparation and use of leftovers
- Procures or supervisors procurement of food from refrigerator, freezer or other storage areas
- Trims and cuts meat and fowl
- Prepares or supervises washing, trimming, cooking, and seasoning of food items
- Measures and mixes ingredients according to recipes
- Observes and tastes food being cooked or prepared
- adds ingredients or seasonings to improve flavor, texture, and appearance
- Tests food being cooked by tasting, smelling, and following methods to determine that it is properly cooked
- Adjusts heat controls and timers on stoves, ovens, steam kettles and grills
- Prepares cold meats, sandwiches and other foods including snacks and beverages
- Inspects meat and other food in storage
- makes recommendation as to menu changes as deemed advisable
