The Cook position at Momiji is a vital role responsible for ensuring the preparation of high-quality food items that align with the restaurant's menu and customer expectations. This role supports all Sushi Chefs and Kitchen Staff by preparing and organizing ingredients efficiently. Cooks are expected to handle a variety of kitchen tasks, such as chopping ingredients, parboiling, and cooking hot items according to standard recipes to maintain consistency in flavor and presentation. They contribute to the overall kitchen operations by maintaining cleanliness and safety, managing ingredient storage, and assisting with inventory needs. Attention to detail and adherence to food safety regulations are critical to excelling in this role. The Cook must be able to operate kitchen equipment safely, follow sanitary standards, and communicate effectively with kitchen leadership to ensure smooth daily operations. Job Requirements
- Ability to stand and walk continually throughout entire shift
- Ability to lift carry and stack items weighing up to 50 lbs
- Ability to bend stoop and reach while carrying items up to 50 lbs
- Exposure to extreme heat steam and cold in kitchen environment
- Manual dexterity to cut chop foods and perform related tasks

- Good understanding of menu and cooking methods including use of knives stove fryer steamer and oven

- Capability to work in prep cook tempura primary cook and secondary cook stations
Job Duties
- Operate in the kitchen and back of the house ensuring food is prepared safely and according to specifications
- Parboil food reduce sauces and start first steps in various dishes as needed
- Ensure ingredients and final products are fresh and complete
- Follow recipes including measuring weighing and mixing ingredients
- Bake grill steam boil fry and chop meat seafood fruits vegetables and grains
- Present and garnish final dishes making them visually attractive
- Maintain a clean and safe work environment
- Contribute to stocking ordering and purchasing ingredients communicating needs to the Head Sushi Chef
- Communicate any issues with kitchen equipment utensils or supplies to the Head Sushi Chef
- Handle and store diverse ingredient types appropriately
- Maintain food safety sanitation standards and adhere to nutrition and sanitary regulations
- Complete all prep list tasks according to company standards
- Label date and stock ingredients for accessibility
- Wash chop and sort ingredients ensuring high quality
- Wash dishes cooking utensils and cookware take out trash and sanitize kitchen
- Operate fryer following safety and sanitation procedures
- Assist serving staff as needed
- Assist other Sushi Chefs and kitchen staff as needed
- Clean dining room and other assigned areas
- Perform other duties as assigned
