The position being offered is that of a Dietary Manager or Food Service Coordinator who plays a critical role in menu planning and food preparation tailored to meet the specific nutritional needs of the residents. This role involves planning nutritious, palatable, and adequate meals in compliance with physicians' therapeutic orders and registered dietitian consultations. The responsibilities extend to ensuring food safety, maintaining food quality through proper temperature control, and managing inventory and purchasing within budget constraints. The role requires meticulous attention to detail including posting menus for resident accessibility, recording substitutions, and preparing appropriate meals and snacks throughout the day that adhere to health and safety standards. Candidates for this position must be able to maintain thorough documentation, uphold confidentiality, and work cooperatively with other staff while supporting resident rights and safety. This is a full-time position that requires strength for manual tasks such as lifting and pushing, as well as adherence to specific health and safety regulations including environmental health standards and slip-resistant footwear. Job Requirements

  • Must have experience in food service
  • must be able to read, write, understand and follow directions
  • must be able to lift, push, or pull minimum of 50 pounds
  • must maintain cleanliness of kitchen within NC Environmental Health Standards
  • must have an understanding of NC Rules and Regulations
  • must have no substantiated findings on the NC Personnel Registry or Health Care Program
  • must have a clear SBI and DMV record and maintain them during period of employment
  • must wear slip resistant shoes while working in dietary at all times

Job Qualifications

  • Experience in food service
  • ability to read, write, understand, and follow directions
  • ability to lift, push, or pull a minimum of 50 pounds
  • knowledge of NC Environmental Health Standards
  • understanding of NC Rules and Regulations
  • clean record on NC Personnel Registry and Health Care Program

Job Duties

  • Prepare required menus at least one week in advance with specified portions and snacks
  • plan therapeutic menus per physicians' orders in consultation with a registered dietitian
  • record any menu substitutions on menu calendar before food is served
  • post menus in kitchen and make available to residents according to policy
  • maintain an up-to-date preference list of foods for each resident
  • prepare and serve three meals a day at regular hours with at least 10 hours between breakfast and dinner
  • assure that hot foods are served hot above 140 degrees F and cold foods served cold below 45 degrees F
  • prepare nutritional bag lunches for residents attending day programs away from the facility
  • prepare and serve appropriate daily menu snacks
  • take inventory and purchase all food and supplies within budget and administrative policy
  • check food deliveries for accuracy and keep receipts on file
  • help maintain residents' self-respect, dignity, and safety
  • maintain confidentiality and adhere to requirements
  • work cooperatively with staff and relate well to residents and families
  • apply accident, fire safety, OSHA, and emergency procedures
  • be familiar with the Adult Care Home Residents' Bill of Rights and assist residents exercising these rights
  • ensure careful treatment of equipment and supplies
  • adhere to all home and employee policies
  • participate in continuing education as required
  • perform other related duties as assigned
  • notify administrator of residents' irregular eating habits and special needs per policy
