The hiring establishment is an Adult Care Home, a specialized facility dedicated to providing comprehensive care and support to its residents. Adult Care Homes play a critical role in the community by ensuring that individuals who require assistance with daily living activities, including dietary needs, receive professional and compassionate care. This job opening is for a critical dietary position responsible for planning and preparing nutritionally balanced meals for residents. The position oversees the development of menus that provide at least three palatable and nutritionally adequate meals each day, including snacks, with attention to therapeutic dietary restrictions as prescribed by physicians in collaboration with registered dietitians. The role requires meticulous preparation of menus with specified portions, advance planning to ensure food availability, and careful recording of any menu substitutions to guarantee residents' nutritional needs and preferences are consistently met.
Additionally, the role calls for maintaining thorough and up-to-date preference lists for each resident, preparing meals at consistent times with adequate intervals between meals, and ensuring food safety standards by serving hot foods above 140 degrees Fahrenheit and cold foods below 45 degrees Fahrenheit. The dietary staff member will also prepare nutritional bag lunches for residents attending external day programs, taking precautions to avoid food contamination given potential lack of refrigeration.
Operational duties include inventory management and procurement of food and supplies within budget constraints and administrative policies. The employee will be responsible for inspecting and confirming the accuracy of food deliveries and maintaining invoice and receipt records for review by the Executive Director or Administrator. This position also upholds important care values such as protecting residents' personal dignity, confidentiality of their information, and promoting cooperative teamwork among staff and positive relations with residents and their families.
Furthermore, the dietary worker must be knowledgeable of and capable of applying all safety and emergency procedures including accident prevention, fire safety, OSHA regulations, and the Residents' Bill of Rights. The role requires adherence to all Adult Care Home and employee policies and participation in continuing education as mandated. Job Requirements
- Must have experience in food service
- Must be able to read write understand and follow directions
- Must be able to lift push or pull minimum of 50 pounds
- Must maintain cleanliness of kitchen within NC Environmental Health Standards
- Must have understanding of NC Rules and Regulations
- Must have no substantiated findings on NC Personnel Registry or Health Care Program
- Must have clear SBI and DMV record and maintain them during employment
- Must wear slip resistant shoes while working in dietary

Job Duties
- Prepare required menus at least one week in advance with specified portions and snacks making sure food is available for preparation
- Plan therapeutic menus per physicians' orders in consultation with a registered dietitian
- Record any menu substitutions on menu calendar before food is served
- Post menus in kitchen for guidance of food service staff and make available to residents
- Maintain an up-to-date preference list of foods for each resident
- Prepare and serve three meals a day at regular hours with at least 10 hours between breakfast and dinner
- Assure that hot foods are served above 140 degrees Fahrenheit and cold foods below 45 degrees Fahrenheit
- Prepare nutritional bag lunch for residents attending day programs with attention to contamination risks
- Prepare and serve appropriate menu snacks daily
- Take inventory and purchase food and supplies adhering to facility budget and policies
- Check all food deliveries for accuracy and keep records for review
- Help maintain self-respect dignity and physical safety of residents
- Maintain confidentiality regarding resident information
- Work cooperatively with staff and relate favorably to residents and families
- Be familiar with and apply emergency, accident, fire safety and OSHA procedures
- Assist residents with exercising the Adult Care Home Residents' Bill of Rights
- Assure careful treatment of equipment and supplies
- Adhere to all Adult Care Home and employee policies
- Participate in continuing education as required
- Perform other duties as assigned or required by circumstances
- Notify administration of residents' irregular eating habits and special needs
