The role of Cook at Momiji involves a vital part in supporting the kitchen operations, preparing ingredients and dishes to meet menu specifications and customer expectations. The Cook works closely with Sushi Chefs and kitchen staff to ensure timely and accurate preparation of food items while maintaining the highest standards of safety and hygiene. - Ability to stand and walk continually throughout the entire shift
- Ability to lift carry and stack items weighing up to 50 lbs

- Exposure to extreme heat steam and cold present in a kitchen environment
- Must have manual dexterity to cut and chop foods and perform other related tasks
- This position is not eligible for telework or flex schedule

Job Duties
- Operate in the kitchen and/or back of the house ensuring that food is prepared safely effectively and according to specifications and/or requests
- Parboil food reduce sauces and start first steps in various dishes as needed
- Ensure ingredients and final products are fresh and complete
- Follow recipes including measuring ingredients weighing and mixing ingredients
- Bake grill steam boil fry and chop meat seafood fruits vegetables and grains
- Present and garnish final dishes so that they are visually attractive
- Maintain a clean and safe work environment
- Contribute to stocking ordering and purchasing of ingredients ensuring that the necessary ingredients are available and as fresh as possible while minimizing spoilage/waste by communicating needs to the Head Sushi Chef
- Communicate any issues with kitchen equipment utensils or other operating supplies to the Head Sushi Chef
- Handle and store diverse types or ingredients appropriately
- Maintain food and safety sanitation standards policies and procedures and adhere to all relevant nutrition and sanitary regulations and standards
- Complete all tasks on the prep list according to company standards
- Label date and stock ingredients so they are easily accessible and in the proper area
- Wash chop and sort ingredients like fruit and vegetables making sure they are of the highest quality
- Wash dishes cooking utensils and cookware take out the trash and sanitize the kitchen
- Operate the fryer following all safety and sanitation procedures
