The Cook role at Momiji is integral to the smooth and successful operation of the kitchen. This position involves preparing ingredients meticulously according to menu specifications and customer preferences, ensuring the highest standards of quality and presentation. The Cook supports Sushi Chefs and other kitchen staff by performing essential prep work such as chopping, organizing, and labeling, effectively managing the flow of ingredients and dishes in a fast-paced setting. Beyond simple preparation, the Cook executes foundational cooking techniques including parboiling, reducing sauces, baking, grilling, steaming, frying, and chopping a wide range of ingredients from meats and seafood to vegetables and grains. This role requires precision in following recipes for consistent taste and presentation while maintaining cleanliness and safety in the kitchen workspace. The Cook also plays a key role in inventory management by assisting with ordering and stock maintenance to minimize waste and ensure freshness. Effective communication with the Head Sushi Chef about kitchen operations and supply needs is essential. Additionally, this role includes routine cleaning duties and compliance with all health and safety regulations, contributing to a hygienic and efficient kitchen environment. Job Requirements

  • Ability to stand and walk continually throughout the entire shift
  • Ability to lift carry and stack items weighing up to 50 lbs
  • Ability to bend stoop and reach while carrying items up to 50 lbs
  • Exposure to extreme heat steam and cold present in a kitchen environment
  • Must have manual dexterity to cut and chop foods and perform other related tasks

  • Must have a good understanding of menu and cooking methods such as using knives stove fryer steamer and oven

  • Must be able to function in the prep cook tempura primary cook and secondary cook stations

Job Duties

  • Operates in the kitchen and/or back of the house ensuring that food is prepared safely effectively and according to specifications and/or requests
  • Parboils food reduces sauces and starts first steps in various dishes as needed
  • Ensure ingredients and final products are fresh and complete
  • Follow recipes including measuring ingredients weighing and mixing ingredients
  • Bakes grills steams boils fries and chops meat seafood fruits vegetables and grains
  • Presents and garnishes final dishes so that they are visually attractive
  • Maintains a clean and safe work environment
