Job Requirements

High school diploma or equivalent
One year of food service or related experience
Must possess a valid food handler's permit in the state of New Mexico or Texas
Valid driver's license in the state of New Mexico or Texas with an acceptable driving record unless waived by management

Job Duties

Prepare and cook quantity of food required according to menu and production sheet
Maintain kitchen equipment in orderly workable condition
Ensure work area is safe, clean and sanitary at all times
Ensure the count and control of knives and other controlled kitchen tools
Provide an accurate count of all controlled items at the beginning and end of each shift
Prepare foods as directed for special facility functions and special diets when prescribed by staff doctor
Assist in cleaning kitchen work areas following each meal
Coordinate the work of inmates assigned to assist in the cafeteria, which includes long periods of sitting and standing
