Job Requirements

  • Prepare all items to Greene Turtle standards
  • Practice safety and sanitation measures
  • Understand food hierarchy and sanitation specifications set forth by The Greene Turtle
  • Assume full responsibility for quality of product served
  • Consistently comply with standard portion sizes, cooking methods, quality standards and kitchen rules
  • Stock and maintain sufficient levels of food product at each station
  • Complete all assigned prep work and properly label
  • Maintain a clean, organized, and sanitary work station
  • Prepare items by portioning, battering, seasoning, or marinating for grilling, frying, broiling or other cooking methods
  • Follow proper plate presentation and garnish setup
  • Assist in food prep and dishwashing during off peak periods
  • Work as part of a team in a fast-paced environment
  • Assist with cleaning, sanitation, and organization of kitchen and storage areas
  • Properly use and maintain all equipment in station
  • Adhere to all shelf-life standards
  • Use checklists for kitchen setup and breakdown
  • Perform daily, weekly, and monthly cleaning duties
  • Practice sanitary and safe food handling
  • Perform shift change and closing duties
  • Maintain performance standards and motivate team
  • Additional duties as requested by management
  • Clean and neat appearance
  • Adhere to uniform policy
  • Stand 100 percent of the time
  • Report to work as scheduled

  • Ability to stand for prolonged periods

Job Qualifications

  • High school diploma or equivalent
  • Previous cooking experience in a fast-paced kitchen environment preferred
  • Knowledge of food safety and sanitation standards
  • Ability to follow detailed recipes and portion control guidelines
  • Strong teamwork and communication skills
  • Ability to maintain cleanliness and organization in the kitchen
  • Ability to work safely with kitchen equipment

Job Duties

  • Prepare all food items at assigned kitchen stations daily
  • Complete prep work, set up and close assigned stations
  • Maintain product presentation, quality, and cook time standards
  • Adhere strictly to Greene Turtle recipes, plate presentations, and specifications
  • Stock and maintain sufficient food product levels at each station
  • Assist in food prep and dishwashing during off peak periods
  • Clean, sanitize, and organize kitchen, walk-in coolers, freezers, and storage areas
