Job Requirements

Ability to stand, walk, use hands and fingers, handle or feel, reach with hands and arms

Job Qualifications

Demonstrated ability to read and write
one year of satisfactory, full-time paid employment in institutional cooking
ability to read and comprehend simple instructions, short correspondence, and memos
ability to write simple correspondence
ability to effectively present information in one-on-one and small group situations
skill in estimating food requirements
knowledge of institutional food preparation and cooking
knowledge of cutting meat
knowledge of proper food storage practices
ability to understand and follow oral and written instructions
ability to deal tactfully with others
ability to apply sensory perception in judging flavor and readiness of foods
ability to meet meal schedules
ability to work varied shifts
ability to understand and follow departmental policies and procedures
current Food Handler's Card from Tulsa City/County Health Department

Job Duties

Review shelter census and estimate and prepare quantities of food as needed
refer to menu and instructions, and select meats, fish, fowl and vegetables from storage
baste, sear, batter, cut, portions and season according to recipes, menu instructions, or personal judgment
cook meat and vegetables, using ovens, griddles, and other utensils
apportion and serve food from steam table
clean and wash work areas and equipment using proper cleaning agents and equipment
follow kitchen cleaning schedule and maintains a clean kitchen
