Job Requirements

Job Qualifications

  • Demonstrated ability to read and write
  • one year of satisfactory, full-time paid employment in institutional cooking
  • ability to read and comprehend simple instructions, short correspondence, and memos
  • ability to write simple correspondence
  • ability to effectively present information in one-on-one and small group situations
  • skill in estimating food requirements
  • knowledge of institutional food preparation and cooking
  • knowledge of cutting meat
  • knowledge of proper food storage practices
  • ability to understand and follow oral and written instructions
  • ability to deal tactfully with others
  • ability to apply sensory perception in judging flavor and readiness of foods
  • ability to meet meal schedules
  • ability to work varied shifts
  • ability to understand and follow departmental policies and procedures
  • current Food Handler's Card from Tulsa City/County Health Department

Job Duties

  • Review shelter census and estimate and prepare quantities of food as needed
  • refer to menu and instructions, and select meats, fish, fowl and vegetables from storage
  • baste, sear, batter, cut, portions and season according to recipes, menu instructions, or personal judgment
  • cook meat and vegetables, using ovens, griddles, and other utensils
  • apportion and serve food from steam table
  • clean and wash work areas and equipment using proper cleaning agents and equipment
  • follow kitchen cleaning schedule and maintains a clean kitchen
