The Cook 1 position at Pebble Beach Company is a vital role within the culinary team, responsible for producing hot and cold foods prepared to the highest standards as set by the Lodge kitchen management. This full-time position offers a competitive pay rate between $26.43 - $31.09 per hour and is unionized under the Unite Here Union which provides health and retirement benefits. In this role, the Cook 1 will be tasked with a variety of responsibilities essential to maintaining the impeccable culinary reputation of Pebble Beach resorts. The position involves preparing cold food items such as sandwiches, salads, and dressings, performing basic vegetable preparation including slicing and dicing, and handling meat, fish, vegetables, and starches with the utmost care. The cook will employ various cooking techniques such as frying, grilling, baking, roasting, and poaching, including the preparation of sauces such as saucier and butter sauces.

The cook is expected to prepare menu items like soups and sauces as directed by team leaders, work in multiple stations including Stillwater Grill, Tap Room, and banquet areas, as well as assist with dishes for banquet functions and special events. A key element of this role is to maintain the quality and consistency of food prepared, ensure attractive food presentation, and uphold cleanliness and safety in all kitchen areas. The Cook 1 will also be involved in training new employees and collaborating closely with the butcher and purchasing department to maintain inventory and portion control.

Job Requirements

  • High school diploma or equivalent
  • five years kitchen experience including two years in similar role at a premier restaurant, resort, or hotel
  • basic knowledge of hot and cold food cooking
  • proficient knife skills
  • ability to work flexible hours including weekends and holidays
  • ability to stand for long periods and perform physical tasks
  • adherence to safety, health, and sanitation standards
  • willingness to work in a union environment
  • pass pre-employment substance abuse testing

Job Duties

  • Assign tasks to employees with the approval of team leaders
  • prepare cold food sandwiches, salads, and dressings
  • basic vegetable prep including slicing, dicing, and proper handling
  • preparations and handling of meat, fish, vegetables, starches
  • basic hot food preparation
  • employ frying, grilling, baking, roasting, and poaching techniques
  • prepare sauces including saucier and butter sauces
  • prepare all necessary menu items such as soups and sauces as directed
  • cook in Employee Dining Room including salad bar set up
  • maintain proficiency in knife and equipment skills
  • keep recipe and set up documentation
  • follow and assist in preparing recipe cards
  • work both sides of the Stillwater Grill, Tap Room and banquet stations
  • set up mise en place for stations
  • set up buffet stations and perform designated functions such as carving or stir fry
  • time cooking of food to ensure orders are completed simultaneously
  • check quality and consistency of food
  • arrange food for attractive presentation
  • assist with dish up for banquets
  • add garnishes
  • help other cooks and lines to promote teamwork
  • assist special events as needed
  • maintain cost-consciousness
  • rotate food for freshness and waste reduction
  • keep work areas and refrigerators clean and neat
  • clean, care for, and store equipment
  • report faulty equipment or unsafe conditions
  • train new employees including Cook 2, 3, and 4
  • collaborate with butcher on product consistency and inventory
  • contribute to daily food order
  • discuss daily production schedule with team leaders
  • suggest improvements to food production and presentation
  • requisition food from Purchasing Department as needed
  • comply with all safety, health, and sanitation policies and procedures
