The position of Cook at VTC Enterprises, located at VSFB, is a full-time role requiring dedication and a keen attention to detail. The Cook is responsible for preparing and cooking high-quality meals that comply strictly with military dining standards. The role demands proficiency in following standardized recipes, executing precise food preparation techniques, and maintaining cleanliness and sanitation in the kitchen. This job entails a varied schedule including weekdays, weekends, holidays, and fluctuating hours, with a starting hourly rate of $22.48. The successful candidate will operate a variety of kitchen equipment safely and efficiently, such as mixers, slicers, ovens, grills, fryers, and steamers. They will prepare a diverse menu encompassing breakfast items, hot entrees, starches, vegetables, cereals, sandwiches, pizza, soups, and salads.
In addition to food preparation, the Cook plays a key role in food safety management by properly labeling and storing leftovers in accordance with HACCP and military guidelines, monitoring and rotating stock to ensure freshness, and promptly reporting any issues with product quality or inventory shortages. Collaboration with the Lead Cook II and other kitchen staff ensures timely service, with a focus on maintaining the highest standards of food presentation and portion control. The role also involves supporting special functions and events, participating in ongoing training and professional development, and assisting with kitchen safety by reporting hazards and unsafe practices.

Job Requirements
- Minimum of a high school diploma or equivalent
- Culinary arts training or vocational training preferred
- Prior commercial kitchen experience or cooking for large groups desired
- Ability to read and write simple instructions and correspondence in English
- Ability to maintain cooperative working relationships
- Ability to work in a fast-paced environment with changing priorities
- Must obtain and maintain a California Food Handler Certification
- Must be available to work weekends, evenings, nights, and holidays

Job Duties
- Follow standardized recipes and production logs for preparing, seasoning, cooking, tasting, and baking
- Prepare all food items according to military dining facility guidelines and standards
- Safely and efficiently operate kitchen equipment including mixers, slicers, ovens, grills, fryers, and steamers
- Measure and mix ingredients accurately, wash, peel, cut, and shred vegetables, and trim and portion meats, poultry, and fish
- Cook a variety of menu items including breakfast, hot entrees, starches, vegetables, cereals, sandwiches, pizza, soups, and salads
- Work closely with Lead Cook II and kitchen staff to ensure timely meal preparation and service
- Maintain cleanliness and sanitation of work areas, kitchen equipment, and utensils throughout shifts and after service
- Properly label, date, and store leftovers and open products following military and HACCP guidelines
- Monitor and rotate stock to ensure freshness and reduce waste, report stock shortages or quality issues to Shift Supervisor
- Follow all HACCP procedures, food safety protocols, and sanitation guidelines
- Ensure compliance with military dining facility policies and procedures
- Support kitchen safety by reporting hazards, accidents, and unsafe practices
- Assist with setup, service, and cleanup for special functions and events
- Participate in ongoing training and professional development
- Perform other duties as assigned by the Shift Supervisor
