Job Requirements

  • High School graduate
  • culinary school or apprentice program graduate
  • prior experience in a private club, hotel, resort or restaurant working different stations
  • ability to be on one’s feet for long periods of time
  • ability to bend, reach, stoop when necessary
  • ability to lift but not exceed 40lbs
  • good or very good knife skills
  • ability to multi-task in a fast-paced, high pressure environment
  • able to work non-traditional work shifts including weekends and holidays
  • able to read and communicate in English

Job Duties

  • Full understanding of any meat or fish with proper seasoning, resting measures, exact temperatures, fabrication, butchery, and portioning
  • sauce making consistent and vibrant with taste and texture with utmost care taken daily
  • strong observer and communicator during service aligning their dishes with everyone else in a controlled manner
  • watchful eye and mentor to Cook 2s and 3s ensuring recipes and expectations are met before they get to the Chef
