The Cook 1 position at Big Canyon Country Club is a senior-level culinary role, primarily stationed at the Meat Station (grill) but requiring versatility to work any station seamlessly whenever needed. This role demands a high degree of culinary expertise, precision, and the ability to maintain composure and productivity in a fast-paced, dynamic kitchen environment. The successful candidate will be expected to demonstrate meticulous attention to detail, consistently follow through on tasks, and effectively multitask and prioritize to meet the club's high standards of food preparation and service. The Cook 1 serves as both a skilled craftsman and a mentor, ensuring that preparations align perfectly with the club's stringent quality and presentation standards.
This role involves a deep understanding of meats and fish, encompassing proper seasoning, resting techniques, precise cooking temperatures, fabrication, butchery, and consistent portioning. The Cook 1 must also master sauce making, crafting sauces that are both vibrant in taste and texture with daily care and consistency. Communication and coordination during service are paramount, as the Cook 1 must work in harmony with other kitchen staff to deliver plates that meet timing and quality expectations. Furthermore, this position requires oversight and mentorship of junior cooks (Cook 2 and Cook 3), ensuring that all recipes and standards are meticulously followed before dishes reach the Chef. This leadership and teaching component is critical to maintaining the club's culinary excellence and fostering team professional growth.

- prior experience in a private club, hotel, resort or restaurant working different stations
- ability to be on one’s feet for long periods of time
- ability to bend, reach, stoop when necessary
- ability to lift but not exceed 40lbs
- good or very good knife skills
- ability to multi-task in a fast-paced, high pressure environment
- able to work non-traditional work shifts including weekends and holidays
- able to read and communicate in English

Job Duties
- Full understanding of any meat or fish with proper seasoning, resting measures, exact temperatures, fabrication, butchery, and portioning

- watchful eye and mentor to Cook 2s and 3s ensuring recipes and expectations are met before they get to the Chef
