The role of Cook at Highgate Hotels is an essential position responsible for preparing all food items in accordance with standardized recipes for various service points including Restaurants, Room Service, Employee Cafeteria, and Banquets. This position demands a commitment to maintaining the highest standards of food quality, presentation, and sanitation. The Cook must ensure the kitchen and work areas are clean, safe, and organized while minimizing waste and optimizing cost and production efficiency. Key responsibilities include food preparation and display, adherence to health and safety regulations, proper food storage and rotation, and support for banquet and special event food service. The role requires flexibility, strong culinary skills, and the ability to work long or varying hours in a physically demanding environment. Job Qualifications
- High school diploma or equivalent and/or experience in a hotel or related field preferred
- culinary experience required
- flexible and long hours sometimes required
- ability to exert medium work - lifting up to 50 pounds occasionally and/or 20 pounds frequently
- ability to stand during entire shift
- ability to withstand temperature variations
- thorough knowledge of menus and preparation according to hotel standards
- proficiency in cooking techniques including charbroiling, poaching, deep-frying, sauté, braising, roasting, and par-cooking
- knowledge of herbs and spices and their proper use
Job Duties
- Maintain cleanliness and organization of all storage areas
- complete necessary food and station preparation prior to restaurant opening
- prepare and display buffet food items according to hotel standards
- recognize quality standards in fresh vegetables, fish, and dairy and meat products
- maintain clean and sanitary environment with knowledge of proper handling, storage, and sanitation
- prepare food for banquets following Banquet Event Orders
- prepare and service food for Employee Cafeteria as specified
- prepare all foods following hotel standard recipes
- breakdown buffets and kitchen line, storing food and equipment properly
- work banquet food stations as scheduled
- know location and operation of all fire extinguishing equipment
- practice safe work habits
- use production charts as per hotel standards
- support any position in Kitchen as needed
- follow health department and company food and storage regulations
- operate and maintain kitchen equipment cleanliness
- maintain a clean as you go policy
- assist in storage and rotation of food items
- sign keys out and back in under supervision as needed
