The role of Commissary Prep Cook at The Tryst Trading Company is crucial in supporting the overall kitchen operations while ensuring the highest standards of food preparation are met. The ideal candidate will be responsible for preparing various food items such as salads, breads, sauces, and dressings by following prep production lists precisely. They will maintain cleanliness and sanitation by setting up, breaking down, and sanitizing workstations, as well as ensuring proper labeling, dating, and storage of food products.

As a Commissary Prep Cook, you will also assist with receiving deliveries and checking for quality, packaging and loading delivery trucks, and ensuring that all kitchen equipment is properly maintained and used correctly. The role demands a strong attention to food safety and quality controls, including maintaining proper food temperatures and reporting any spoilage or waste to management. Individuals employed in this position must be proactive in identifying any quality or safety concerns and alerting management immediately to uphold the company's high standards.

Job Requirements

  • Must be able to lift 50 lbs

Job Qualifications

  • Knowledge of basic cooking techniques
  • Proven experience as a prep cook
  • Knowledge of health and safety rules in a kitchen

Job Duties

  • Setting up, breaking down and properly sanitizing workstations
  • Following prep production lists
  • Gathering, measuring, preparing, chopping, portioning and/or cooking food ingredients
  • Prepare salads, breads, salad dressings and sauces
  • Assist with receiving deliveries from suppliers and alert management of any quality issues
  • Assist with packaging and loading delivery trucks
  • Assist with washing cookware and smallware as needed
  • Alert management of any quality or safety concerns
  • Ensure kitchen equipment and appliances are properly maintained, cleaned and used correctly
  • Ensure proper labeling, dating and storage of prepared food items
  • Maintain a clean, organized and hygienic work environment at all times
  • Ensure proper food temperatures are maintained
  • Report all waste or spoilage to management
  • Ensure food is stored away properly when not in use
  • Follow running and closing sidework lists
  • Perform tasks or duties as directed by the management
  • Learn about the cooking methods and techniques employed in the kitchen
