The role of Cider Maker is a full-time position on the Production Graduate Track, located at the Boston Harbor Shipyard. This position offers shifts either from 6am to 2pm or 12pm to 8pm, with a starting hourly wage of $20 that scales with experience. This opportunity is perfect for candidates eager to develop their expertise in fermentation science and cellar operations within a hands-on production environment. The Cider Maker is the heart of Downeast’s production floor responsible for mastering the technical craft of fermentation and cellar management. This role demands someone who prioritizes safety, adheres strictly to standard operating procedures, and is enthusiastic about continuous learning and improvement. They manage all fermentation stages, from rehydrating yeast and pitching nutrients to scheduling rackings and ensuring the correct carbonation and blending of cider. This position also requires physical stamina to handle lifting and working in sometimes challenging environments. Quality control is paramount, with tasks including maintaining meticulous records, performing lab tests to ensure product stability, and consistently upholding sanitation standards. Job Requirements

  • Physical ability to lift 50+ lbs repeatedly
  • ability to work in hot, cold, damp, and confined spaces
  • adherence to safety protocols
  • willingness to learn technical tasks and SOPs
  • reliable team player showing punctuality and clear communication
  • capacity to handle a fast-paced production environment and feedback
  • ability to manage data and conduct lab tests

Job Qualifications

  • Degree in food science, chemistry, biology, or related field is a plus but not required
  • ability to work 6am-2pm or 12pm-8pm shifts
  • ability to perform physically demanding work
  • effective communication skills for giving and receiving feedback
  • previous cellar or brewery experience is a bonus
  • knowledge of pasteurization or heat exchange is a bonus
  • proficiency in Google Sheets and ERP systems is a bonus

Job Duties

  • Rehydrate and pitch yeast/nutrients
  • monitor gravities and temperatures
  • schedule rackings, fermentations, and fining of cider
  • deaerate and carbonate finished product to exact specifications
  • taste and blend ciders to develop palate for consistency and innovation
  • offload raw juice and manage ingredient storage
  • conduct sanitary transfers using pumps and hoses
  • operate specialized equipment including centrifuge and pasteurization systems
  • perform rigorous clean-in-place procedures on tanks and vessels
  • maintain and manage meticulous data in enterprise resource planning systems
  • conduct lab procedures such as titrations and cell counts to ensure product stability
  • adhere to all sanitation and quality control processes without exception
