The Kitchen Manager is responsible for ensuring that food preparation, presentation, and timing adhere to quality expectations while managing inventory, vendor relationships, and food cost controls to optimize operational efficiency.

Maintaining rigorous compliance with health, safety, and sanitation standards in accordance with California health codes is a critical component of this role. The Kitchen Manager will coordinate with General Managers and Regional Kitchen Managers on labor forecasting, scheduling, and achieving financial goals. Additionally, this role encompasses conducting performance evaluations, troubleshooting equipment issues, and supporting special events and brewery-wide initiatives.

This position suits candidates with three or more years of kitchen leadership or management experience, preferably within breweries or high-volume restaurants. The ideal candidate will exhibit a hands-on leadership style, organizational prowess, operational focus, and strong knowledge of food safety protocols. A valid California Food Manager Certification or willingness to obtain one upon hire is required. Fluency in Spanish and being over 21 years old with authorization to work in the U.S. are advantageous.

Job Duties

  • Lead all day-to-day kitchen operations ensuring consistency cleanliness and execution at Fieldwork standards
  • Hire train coach and develop a team of line cooks and dishwashers through clear expectations and active leadership
  • Execute food preparation and service with attention to quality timing and presentation
  • Manage inventory ordering food cost controls and vendor relationships
  • Maintain full compliance with health safety and sanitation standards including logs storage cleanliness and food safety
  • Partner with the General Manager and Regional Kitchen Manager on labor forecasting scheduling and financial targets
  • Ensure recipe adherence portion control and menu execution consistency
  • Conduct performance check-ins evaluations and corrective coaching as needed
  • Troubleshoot kitchen equipment issues and coordinate repairs with vendors
  • Support special events private bookings and brewery-wide initiatives
