The Tournant Chef position at Resorts World Las Vegas is a critical role designed to ensure seamless culinary operations across all Food and Beverage outlets on the property. This role demands flexibility, expertise, and leadership, as the chef is required to work at various kitchen stations, stepping in during staff shortages, peak service times, or when specific areas need additional support. The Tournant Chef collaborates closely with the Executive Chef and Assistant Executive Chef to uphold and execute the resort’s culinary standards, including menu planning, training, purchasing oversight, and budget management. This role also encompasses responsibilities such as supervising kitchen staff, ensuring compliance with health and safety regulations, managing inventory levels based on resort occupancy, and maintaining the cleanliness and organization of back-of-house areas along with the Stewarding department.
Given the nature of the position, the Tournant Chef must possess strong knowledge of multiple cooking techniques and cuisines to adapt quickly to different culinary stations and tasks. Excellent communication and leadership skills are essential for mentoring and supervising kitchen teams, ensuring consistent quality in food preparation, presentation, and portion control. The position requires flexibility in working varied shifts, including nights, weekends, and holidays, with inconsistent days off due to the demands of covering multiple outlets or staffing needs. Candidates are expected to uphold professional appearance and demeanor, demonstrate proficiency in English, and have the ability to write routine reports, purchase orders, and menus. Resorts World Las Vegas seeks professionals with a strong culinary background, preferably with previous experience as a Chef de Partie or Sous Chef, and a degree in Culinary Arts is favored but not mandatory.
This role also involves complying with company policies, union contracts, and relevant licensing and certification requirements, including a valid Servsafe Manager Certification. Job Requirements
- At least five years of experience in a chef role in a similar or related field
- At least ten years of experience in food and beverage in a similar or related field
- Must be 21 years of age
- Valid Servsafe Manager Certification
- Proof of eligibility to work in the United States
- Ability to work varied shifts including nights, weekends, and holidays
- Ability to stand for prolonged periods and work in varying kitchen conditions
- Capability to lift and maneuver items weighing up to 50 lbs
- Effective compliance with company policies, safety, and procedures

Job Duties
- Step in and work at different kitchen stations as needed
- Ensure all dishes meet Resorts World Las Vegas specific standards for taste, presentation, and portioning
- Assist with food preparation, plating, and maintaining workflow within the kitchen
- Manage inventory, food requisitions, and supervise staff
- Oversee chefs, team members, and food preparation in key areas of the property
- Conduct daily walk-throughs to ensure compliance with health regulations and quality control
- Collaborate with the Stewarding department to maintain cleanliness of back-of-house areas and equipment
- Monitor food stock and par levels according to forecasted resort occupancy
- Use personal devices for job-related tasks and communications
- Perform other job-related duties as requested
- Understand and manage union contracts and employee relations
