The Chef Tournant role at Salish Lodge & Spa is a pivotal position within the culinary team, supporting the Executive Chef and Executive Sous Chef in maintaining seamless kitchen operations. This full-time position offers an annual salary of $80,200 along with eligibility for performance incentives and a comprehensive benefits package. The Chef Tournant is expected to demonstrate versatility by performing any culinary role necessary according to business needs, staffing requirements, or special events. This role carries significant responsibility including overseeing the kitchen during the Sous Chef's absence, managing both the AM and PM shifts, and ensuring the quality and presentation of all food meet the highest standards.
Key responsibilities include developing and implementing operational procedures, maintaining communication with leadership, managing inventory and purchasing, supervising and training kitchen staff, and upholding sanitation and safety protocols. The ideal candidate is an accomplished culinary professional with a culinary arts degree or equivalent training and at least three years of leadership experience in a similar setting. Advanced culinary skills, including expertise in sauces, butchering, and working knowledge of various kitchen stations and equipment, are essential. The successful candidate must also possess strong organizational skills, adaptability in a fast-paced environment, excellent interpersonal skills, and proficiency with software such as Microsoft Word, Excel, and Outlook.

Job Requirements
- Culinary arts degree or equivalent training
- Three or more years of culinary lead or supervisory experience
- Working knowledge of culinary techniques including sauces and butchering
- Flexibility to perform multiple tasks in stressful situations
- Familiarity with Microsoft Word, Excel, and Outlook
- Excellent interpersonal and communication skills
- Detail-oriented, reliable, punctual, and organized
- Ability to evaluate food quality using taste, touch, sight, and smell
- Valid food handling permits or certifications
Job Qualifications
- Culinary arts degree or equivalent training
- Three or more years of culinary lead or supervisory experience in a similar environment
- Working knowledge of all major and minor sauces
- Working knowledge of proper butchering techniques
- Working knowledge of all line positions including grill, sauté, sauces, and plating
- Working knowledge of specialized culinary equipment used at the property
- Advanced knife skills
- Proficiency in Microsoft Word, Excel, and Outlook
- Excellent people skills with a professional, friendly, and enthusiastic demeanor
- Detail-oriented with exceptional organizational skills
- Ability to adapt to shifting priorities and perform multiple tasks
- Ability to adjust flavor preparations and accommodate guest needs promptly
- Ability to evaluate food quality through sensory inspection
- Food handling permits, licenses, or certifications as required
Job Duties
- Completes all kitchen duties as needed or directed
- Assist the Executive Chef and Executive Sous Chef in running the culinary operation at the Lodge
- Work in any culinary role as needed due to business volumes or call outs
- Maintain responsibility for day-to-day operation of the kitchen and have complete responsibility during Sous Chef's absence
- Be responsible for shift operations covering AM and PM
- Develop and implement procedures ensuring all work meets established standards
- Communicate daily with Executive Chef for updates and changes
- Maintain standards for food quality, presentation, handling, sanitation and safety
- Ensure timely and courteous follow-through on all client, guest, and team member requests
- Assist in selection, supervision, training, development, scheduling, evaluating, disciplining, and counseling of staff
- Demonstrate positive leadership that empowers and inspires employees
- Monitor food and labor costs
- Conduct daily walk-throughs of refrigerators, dry storage, and food lines to ensure cleanliness and proper rotation
- Assist with purchasing, receiving and inventory of kitchen items
