The Universal Horror Unleashed team is currently seeking a skilled culinary professional to join their kitchen as a key member responsible for food preparation, production, and quality assurance. This role is perfect for a culinary expert passionate about delivering exceptional food experiences within a high-energy, themed environment. The position operates under the supervision and guidance of the Executive Sous Chef, where food safety, HACCP compliance, and Southern Nevada Health District regulations are strictly enforced to ensure the highest standards are met.
In this role, you will be responsible not only for food preparation and presentation but for motivating and directing a culinary team to achieve operational excellence. Leading training efforts, maintaining recipe documentation, and developing new dishes for special events are integral parts of this position. You will also be involved in cost control measures, inventory management, and scheduling to align culinary operations with business needs and projected attendance. Partnering closely with other departments, you will help maintain the kitchen's cleanliness, safety, and functional equipment, collaborating with Technical & Show Maintenance teams when necessary.
The successful candidate will have a strong culinary background with over three years of experience, including leadership or supervisory responsibilities. Food quality and continuous improvement should be areas of focus, along with a commitment to adhering to safety standards and efficient operational practices. Job Requirements
- Must be able to work a flexible and varying schedule based on business demands
- strong culinary skills and a flair for food quality, flavor, and continuous improvement
- must be able to obtain a LVMPD non-gaming work card upon employment
- professional Food Safety Manager Certification and local state certifications are required
- chef’s apprentice or associate’s degree preferred
- 3+ years of culinary experience with 1+ year of supervisory or lead experience
- consistent attendance

Job Duties
- Supervises and assists in preparation and presentation of all food items
- ensures food is fresh and prepared in a timely fashion while maintaining cost and quality controls
- leads stewarding and receiving associates to ensure all SNHD standards are adhered to and best practices are in place
- assists with managing cost controls and controlling expenditure for all back of house operations
- ensures waste is at a minimum and food cost is met each month
- follows all health and safety standards in accordance with the Southern Nevada Health District regulations and Universal standards
- ensures a clean and safe work environment and maintains proper working order of restaurant equipment needs and repairs, partnering with Technical & Show Maintenance as needed for equipment repairs
- schedules culinary team and production of food items according to projected attendance
- trains culinary team in production and presentation of products
- maintains recipe books and training logs
- ensures proper HACCP program is maintained and standards upheld
- creates new recipes for special events and for the restaurant
- understands and actively participates in Environmental, Health & Safety responsibilities by following established UDX policy, procedures, training, and team member involvement activities
- performs other duties as assigned
