The role offered is for a Department Manager who is responsible for leading and managing both the front and back of house culinary associates, including Sous Chefs, wait staff, cooks, and dishwashers. This leadership role encompasses staff scheduling, evaluation, training, and development, as well as making employment decisions such as wage recommendations, promotions, or disciplinary actions. An understanding of operational objectives, departmental standards, and budget management is essential to effectively supervise culinary operations. Responsibilities include monitoring food preparation methods, portion control, garnishing, and ensuring compliance with health regulations and cleanliness standards. The Manager will implement and monitor hygiene protocols and maintain temperature and cleaning checklists to safeguard food handling practices.
The role requires excellent communication skills to foster effective collaboration between front and back of house teams, ownership of all areas under management, and the ability to monitor and adjust food production levels based on sales data. Budget adherence with a keen understanding of costing formulas and yield percentages is necessary to maintain financial goals. The Manager will develop operational policies and procedures and oversee management plans including budgets and labor schedules.
Additional responsibilities include recipe writing and costing, contributing to a recipe database, mentoring new hires, and meeting daily operational deadlines. The physical demands of the position include the ability to stand, sit, and walk for prolonged periods, and working in an environment with secondhand smoke and noise.
