The role available is for a Chef Manager to oversee all daily culinary operations within a high-volume institutional kitchen serving approximately 1,500 scratch and blast-chilled meals daily. This position demands a highly skilled culinary professional capable of managing large-scale food production while strictly adhering to nutritional requirements and sanitation regulations. The Chef Manager's responsibilities include supervising kitchen staff and volunteers, maintaining inventory, controlling food costs, ensuring food safety compliance, and guaranteeing that each meal meets the high standards required to support seniors' health and dietary needs.

This full-time position offers an opportunity to contribute meaningfully by delivering meals that are not only nutritious but also appealing and suitable for a variety of special diets, including low-sodium, diabetic-friendly, renal, pureed, and mechanical soft meals. The Chef Manager must be adept at scaling recipes for mass production, managing the assembly line with industrial-grade culinary equipment such as tilt skillets, steam kettles, and rack ovens, and implementing rigorous Hazard Analysis Critical Control Point (HACCP) protocols. Strong leadership skills are necessary to coordinate and motivate a diverse team, including scheduling shifts and efficiently deploying community volunteers, ensuring a seamless operational flow from procurement to dispatch.

Job Requirements

  • Minimum of 3 years experience in high-volume food production kitchen
  • Active ServSafe Manager Certification
  • Proficient knowledge of HACCP compliance

Job Qualifications

  • Minimum 3 to 5 years experience managing a high-volume production kitchen producing over 1,000 meals per shift
  • Active ServSafe Manager Certification upon hire
  • Proficiency in running a full scope HACCP program
  • Skilled in operating large-scale industrial culinary machinery such as combi-ovens, industrial sealers, and commercial mixers

Job Duties

  • Oversee daily preparation, cooking, and assembly of 1,500 hot, chilled, or frozen meals using industrial equipment
  • Masterfully scale recipes for large quantity production
  • Plan rotating menus tailored to senior nutrition and special diets
  • Ensure 100% compliance with health and eldercare nutrition regulations
  • Implement and monitor HACCP protocols focusing on rapid cooling and safe holding zones
  • Meticulously log food temperatures from receipt to delivery
  • Direct continuous sanitation and deep-cleaning of kitchen and processing equipment
  • Manage procurement and inventory control, minimizing waste and adhering to budget
  • Supervise and schedule kitchen staff and volunteers
  • Coordinate meal dispatch ensuring meals are temperature-secured and delivered on time
