The role of Chef II at Target Hospitality is an essential part of the culinary team, reporting directly to the Head Chef. This hourly position focuses on assisting with daily menu preparation, ensuring food safety, quality, and compliance with company policies. The Chef II supports the head chef and other cooks by preparing meals accurately and efficiently, adhering to food handling standards such as HACCP and FIFO guidelines. This role requires operating various kitchen equipment safely, including grills, slicers, tilt skillets, deep fryers, and convection ovens. The successful candidate will be responsible for preparing adequate quantities of food according to the menu plan, serving guests while checking meal scans, and maintaining proper sanitation and portion control.

Beyond cooking duties, the Chef II is expected to actively participate in safety meetings and emergency response protocols, contributing to a culture that prioritizes health and safety standards. The position involves physically demanding tasks such as standing for extended periods, lifting heavy items, and working in hot and cold environments. Candidates should be prepared for rotational schedules that may involve six weeks on and two weeks off or other arrangements based on business needs. This role requires flexibility, reliability, and the ability to work both independently and within a team.

Target Hospitality values a candidate with at least two years of culinary experience, preferably in remote camps or hospitality industries. Certifications such as food safe and first aid are advantageous. Effective communication in English, strong prioritization and time management skills, and the ability to pass background checks and urine analysis are all required. Job Duties

  • Maintain a safety culture by following all SOPs, JHAs, policies, and procedures
  • Safely operate kitchen equipment including grills, slicers, tilt skillets, deep fryers, and convection ovens
  • Ensure proper food storage, rotation, and discarding of expired items per HACCP and FIFO guidelines
  • Prepare meals according to menu plans and production quotas
  • Serve guests and check for meal scans
  • Serve food in compliance with HACCP and food safety standards
  • Use proper utensils for serving, portion control, and sanitation
  • Prepare breakfasts to order like omelets and eggs
  • Provide world-class customer service
  • Attend safety meetings and participate in emergency response procedures
  • Perform additional duties as assigned by supervisor or manager
