Currently, Seattle University is hiring a full-time Chef to join their campus dining team immediately. This role is an integral part of the food service operation, offering a chance to contribute to quality food production and service in an educational setting. The Chef will primarily work full-time hours, with schedules varying to meet catering and operational needs, allowing some flexibility in workdays and hours depending on specific demands. Job Requirements
- Prior sous chef and/or Chef De Cuisine experience with banquets and plated catering functions
- Ability to work full-time with flexible schedules depending on catering needs
- Ability to perform leadership duties including interviewing, scheduling, training and payroll management
- Knowledge of food handling, sanitation and safety regulations
- Ability to maintain a clean and efficient kitchen workspace
- Strong organizational skills to track food use, inventory and waste
- Ability to work effectively in a fast-paced environment and meet production deadlines
Job Qualifications
- Prior sous chef and/or Chef De Cuisine experience with banquets and plated catering functions
- Experience in supervising kitchen staff and managing food production
- Knowledge of food safety and sanitation standards
- Ability to prepare high-quality food according to standardized recipes
- Strong leadership and communication skills
- Experience in inventory management and controlling food waste
- Culinary degree or relevant certification is preferred but not required
Job Duties
- Supervises, coordinates and participates in activities of cooks and other associates engaged in preparing, cooking and serving food
- Ensures all food handling, sanitation and customer service standards are met
- Supervises hourly kitchen associates, including interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action
- Efficiently prepares high-quality food items according to standardized recipes to meet production, delivery and service schedules
- Serves meals or prepares for delivery
- Ensures proper presentation, food quality, portion control and maintenance of proper serving temperatures
- Tracks food use, waste and consumption to requisition or purchase product
- Receives and inspects product and supplies for quality and quantity to ensure appropriate inventory
- Maintains sanitation of equipment, supplies and utensils
- Cleans workstation thoroughly before leaving area
- Keeps display equipment clean and free of debris during meal service to ensure compliance with sanitation, safety, production and merchandising requirements
- Helps select and develop recipes and menus
- Performs other duties as assigned
