The Chef De Rang position in Remy, one of Disney Cruise Line's French-inspired luxury restaurants, represents an exceptional career opportunity for hospitality professionals passionate about fine dining service. As a Chef De Rang, you will play a crucial role in creating an unforgettable dining experience for guests by providing outstanding and personalized service at a high level of excellence. Remy is distinguished by its gastronomic cuisine crafted by Michelin star chefs, offering guests a culinary journey that combines exquisite flavors with a sophisticated ambiance. This position requires strong knowledge of fine dining etiquette, an eye for detail, and a commitment to delivering impeccable service.

Reporting directly to the Maître d'Hotel, the Chef De Rang will be entrusted with coordinating seamless dining operations, from greeting guests and explaining menu details to ensuring accurate and timely delivery of meals. This role demands excellent communication skills, the ability to work harmoniously with team members, and a dedication to maintaining the highest standards of cleanliness and food safety as outlined by United States Public Health guidelines. The Chef De Rang will also engage in up-selling and suggestive selling techniques to enhance guest satisfaction and contribute to the restaurant's success.

This is a shipboard role requiring candidates who are genuinely interested in a career at sea and willing to live and work onboard a Disney Cruise Line vessel. Job Requirements

  • Be genuinely interested in a career at sea and willing to live and work onboard a Disney Cruise Line vessel
  • be willing to follow and perform safety role, emergency responsibilities, and associated responsibilities as specified in the ship Assembly Plan
  • be willing to uphold general safety management responsibilities as specified in the Safety Management System in areas and operations under their control
  • if applicable, be willing to share a confined cabin with other crew members and appreciative of working and living in a multicultural environment with strict rules and regulations
  • have a valid passport and C1/D Seaman's visa (Disney Cruise Line will provide documents to obtain this)
  • complete a pre-employment medical
  • obtain a criminal background check
  • bring approved work shoes

Job Qualifications

  • Minimum one year of recent experience in the service industry in a high-level fine dining restaurant setting
  • experience in Michelin Star restaurant
  • good knowledge of international wines and cocktail recipes and brands of alcohol
  • confident in speaking to well-traveled guests

Job Duties

  • Detailed menu description to guests
  • take orders and set table for each course
  • coordinate service and ensure accurate timing and delivery of food to the proper table and guest
  • lead all aspects of side work and other tasks assigned by management
  • use computer work station (Micros system)
  • coordinate ordering, pick-up and delivery of all food and beverage to work station and to guests
  • partner with Demi Chef de Rang to provide a flawless experience to guests
  • understand food safety programs and maintain USPH sanitation and cleanliness standards
  • practice up-selling and suggestive selling techniques
  • follow responsible vendor procedures for alcohol service
  • bid fond farewell to all guests and ensure they enjoyed their dining experience
