The available position is for a senior supervisory role within the ship's galley (kitchen), reporting directly to the Executive Chef. The role involves managing the day-to-day operations within an assigned area of the galley to ensure that all food preparation, storage, and administrative tasks meet the highest standards of quality and hygiene. This includes overseeing food production, enforcing strict adherence to budget constraints, and ensuring compliance with health and safety regulations such as USPH/HACCP, ISM/ISO, and SQM standards. The position requires a detailed-oriented, proactive individual capable of planning, organizing, and managing both human and material resources efficiently.

This leadership role also involves supervising and training the galley crew, scheduling work shifts, conducting personnel evaluations, and fostering a positive, productive work environment. The role requires excellent communication skills, both in German and English, alongside proficiency in relevant IT systems such as MS Office and hospitality management software (FIDELIO, Fidelio Cruise, Micros). The candidate must have robust culinary knowledge, including expertise in international cuisines, food-cost calculation, inventory management, and sanitation protocols.

Job Qualifications

  • Qualified training as a cook
  • many years of job experience in a comparable position in a modern, high standard hotel or restaurant galley, preferably onboard a cruise vessel
  • economical, budget-oriented thinking with ability to understand business targets
  • good knowledge of inventory management
  • very good knowledge regarding food, ingredients, recipes (modern, international cuisine) and food-cost calculations and production control of passenger and crew menus
  • very good knowledge of all cleaning procedures, cleaning agents, chemicals including storage and USPH standards
  • business fluent in written and spoken German and English
  • living up to service values
  • good IT knowledge especially in MS Office, FIDELIO, Fidelio Cruise, Micros
  • good educational background

Job Duties

  • Responsible for the up-to-standard work flow in the assigned work area of the galley and related administrative tasks in cooperation with the executive chef
  • food preparation in strict adherence to the given standards
  • ensure all operations are carried out with utmost economy consistent with agreed quality and hygiene standards
  • contribute to food, beverage and consumables orders respecting budget and other requirements
  • acceptance and checking of deliveries in the assigned work area
  • implement and check professional, economic storage of all foodstuffs and equipment complying with hygiene and quality standards, including expiry dates
  • adhere strictly to all agreed regulations (USPH/HACCP, ISM/ISO, SQM, TUIC service standards) especially concerning security, environment and hygiene in the area of responsibility
  • provide safe storage assistance in adverse weather
  • notification and handling of all relevant unusual events such as damages, repairs, security violations
  • responsible for equipment setups and storing goods and equipment to standard
  • preparation and regular checks of logs and checklists
  • planning, organization and documentation of inventories
  • examination and control of stock movements and orders in the area of responsibility
  • instruct, train and supervise the assigned crew including documentation
  • duty roster planning
  • personnel reviews
  • assist in special events
  • cleaning and sanitizing of the work area including utensils and equipment using personal protective equipment
  • provide loading and suitcase service assistance when required
