The Garde Manger/Pantry/Salad Department Chef position at Augusta Country Club is a vital role within the culinary team, responsible for preparing outstanding cold food items, chilled soups, salads, and artistic presentations such as charcuterie and cheese boards. This full-time role, averaging 35-40 hours per week, offers an exciting opportunity for chefs who are passionate about cold food preparation and presentation. This position is not only hands-on in creating visually appealing and flavorful dishes but also requires collaboration to assist with breakfast, lunch, and dinner services both in the banquet kitchen and a la carte restaurant settings.

This chef role demands a high level of skill in preparing a variety of specialized foods including composed salads, pates, terrines, sushi, and elaborate display items like poached fish presentations. The chef will also be responsible for preparing complementary components such as sauces, salsas, relishes, and chutneys, ensuring each dish is balanced and enhances the overall dining experience. An important aspect of the job is managing the station effectively, which includes portioning poultry, fish, and seafood, replenishing supplies, requisitioning food items, and maintaining a clean, sanitized, and organized workspace.

Ideal candidates will bring at least three years of professional kitchen experience or a culinary arts degree, preferably with experience in private club or resort environments. This role requires dedication to quality, attention to food safety, and the ability to work cohesively in a team environment focused on delivering exceptional food experiences to discerning members and guests. Job Requirements

  • Must have a minimum of 3 years of relevant culinary experience
  • Culinary arts degree preferred
  • Must be drug free and pass drug test
  • Must pass background check
  • Ability to work full-time, 35-40 hours per week
  • Ability to work flexible shifts including breakfast, lunch and dinner periods
  • Must be physically able to perform kitchen duties
  • Must have excellent communication skills

Job Qualifications

  • Minimum of 3 years of similar experience in a professional kitchen or a college degree in Culinary Arts
  • Experience in a private club or resort setting is a plus
  • Knowledge of food safety and sanitation standards
  • Ability to work well in a team and under pressure
  • Strong organizational and time management skills
  • Excellent knife skills and cold food preparation techniques

Job Duties

  • In charge and responsible for cold foods, chilled soups, fruit platters, composed salads, pates, terrines, salad dressings, sushi, charcuterie boards, cheeses and poached whole fish displays
  • Assist with breakfast, lunch and dinner production in the banquet kitchen
  • Assist with breakfast, lunch and dinner a la carte menu in the restaurant
  • Portion fish, poultry and seafood
  • Prepare sauces, salsas, relishes and chutneys
  • Re-stock station for the next day
  • Requisition food for station
  • Breakdown and clean station
  • Clean and sanitize working area
