Job Description
Delaware North Sportservice is a global hospitality and foodservice company known for delivering exceptional culinary experiences in some of the most iconic venues and locations worldwide. With a rich history rooted in a family-owned business spanning over a century, Delaware North has established itself as a leader in premium dining, concessions, casinos, national parks, hotels, and sports arenas. At American Family Field in Milwaukee, Wisconsin, home of the Milwaukee Brewers since 1970, Delaware North operates a wide range of concession outlets, suites, all-inclusive areas, and clubs, including the renowned J. Leinenkugel's Barrel Yard Brewery, Bar, and Restaurant. The company values partnerships with local vendors and emphasizes incorporating regional staples into its food and beverage offerings, ensuring an authentic and elevated guest experience.
The Chef de Cuisine role at Delaware North Sportservice is a pivotal leadership position that offers a unique opportunity to drive culinary excellence within the premium Truss Club at American Family Field. This venue is recognized for its sophisticated hospitality environment, offering an all-inclusive dining experience that emphasizes quality, creativity, and impeccable service. As Chef de Cuisine, you will be at the forefront of culinary operations, overseeing the premium club kitchen and managing every aspect of food preparation, presentation, and team performance. Your leadership will be critical during both daily operations and high-energy game-day events, where maintaining consistency, quality, and timing is essential.
This position commands a base salary range of $81,900 to $110,600 per year, complemented by an annual bonus plan based on company and individual performance or a role-specific uncapped sales incentive plan. Delaware North also offers a competitive benefits package, highlighting medical, dental, and vision insurance, 401(k) contributions, paid vacation, parental leave, tuition reimbursement, and generous discounts across their hospitality properties.
In your role as the Chef de Cuisine, you will be responsible for the culinary direction of the Truss Club’s varied menu offerings, which include curated dishes, buffet presentations, action stations, and specialty events tailored to deliver a refined and memorable guest experience. This hands-on leadership position requires a balance of creativity, operational expertise, and the ability to inspire and develop a culinary team that thrives in a fast-paced, high-volume setting. Your focus on detail, from recipe adherence to food safety compliance, will ensure the highest standards of hospitality are met consistently.
The ideal candidate will have extensive experience leading culinary teams in premium hospitality settings such as upscale restaurants, clubs, hotels, catering services, or sports and entertainment venues. Strong cooking skills and the ability to lead by example during busy service periods are essential. You will collaborate closely with the Executive Chef on menu planning and innovation, while also managing key aspects such as food and labor cost controls, inventory management, and sanitation compliance. This role demands excellent organizational skills, the capacity to juggle multiple priorities effectively, and proficiency in necessary technology platforms.
Beyond technical skills, the Chef de Cuisine will foster a positive and accountable kitchen culture, through training, coaching, and performance management of culinary staff. Working closely with front-of-house teams, you will help create a seamless premium club experience that enhances the overall hospitality atmosphere. This role involves flexible scheduling, including nights, weekends, holidays, and special event coverage, reflecting the dynamic nature of working in a major sports venue.
Joining Delaware North means becoming part of a global legacy dedicated to giving guests great times in great places. We believe in investing in our people’s personal and professional development, providing pathways for growth across a diverse and vibrant hospitality network. Our commitment to equitable employment practices ensures a welcoming environment for all candidates.
