Job Description

Eataly is the world's largest artisanal Italian food and beverage marketplace, distinctively known for its authentic Italian culinary experience. Unlike traditional chains, each Eataly location is uniquely designed with its own character and theme to reflect the local environment while maintaining the core mission of providing guests with an immersive Italian food experience. The role of Pastry Chef at Eataly is a key leadership position responsible for overseeing the production of all pastry items, including Italian pasticcini, cakes, desserts, cookies, candies, and other traditional dolci. Reporting directly to the Executive Chef and functionally to the Head of Pastry, the Pastry Chef leads a team that includes a Sous Chef Manager and multiple Pastry Cooks, ensuring seamless and high-quality pastry production across the entire marketplace. This position demands a combination of culinary expertise, management skills, and dedication to maintaining the authenticity and standards that Eataly is known for.

The Pastry Chef is responsible for directing and participating in the preparation of all pastry items served at Eataly's counters and restaurants. This includes hands-on involvement in crafting beautiful and delicious pastries that meet the high expectations of Eataly's discerning clientele. Managing the pastry team includes responsibilities such as hiring, scheduling, payroll submission, training in Italian pastry techniques, providing feedback, motivation, counseling, and handling terminations if necessary. The Pastry Chef ensures that all pastries meet quality standards in flavor, texture, portion size, and consistency, guaranteeing a memorable culinary experience for guests.

Additionally, the Pastry Chef produces decorative centerpieces and fulfills special pastry orders, showcasing creativity and attention to detail. Efficient management of inventory through ordering and requisitioning supplies is also a critical function, ensuring that the pastry kitchen runs smoothly without interruption. The Pastry Chef works closely with the Executive Chef and Pastry Quality Head to innovate and introduce new recipes, keeping Eataly’s offerings fresh and exciting.

Maintaining cleanliness and adhering to Department of Health standards in the food production area is a top priority, confirming Eataly’s commitment to safety and hygiene. The position requires flexible availability, often with evening and weekend hours, and the physical ability to handle the demands of a busy kitchen environment. Compensation for this role ranges from $70,000 to $75,000 annually, reflecting the importance and expertise needed for this leadership culinary position.

Job Requirements

  • Availability to work onsite with a flexible schedule often including evenings and weekends
  • ability to lift up to 50 pounds
  • ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
  • ability to use a burning oven, commercial stand mixer and other pastry baking equipment

Job Qualifications

  • 6+ years of experience in a high-volume pastry preparation position
  • knowledge of Italian pastries and techniques
  • outstanding communication and leadership skills
  • intermediate computer skills
  • degree from a post-secondary culinary or pastry arts training program preferred

Job Duties

  • Directs and participates in the production of all pastry items for Eataly's counters and restaurants
  • manages the pastry team including hiring, scheduling, payroll submission, feedback, motivation, training, coaching, counseling, and handling terminations
  • verifies all foods prepared meet quality standards in terms of portion size, flavor, texture and consistency
  • produces decorative centerpieces and special orders
  • orders and requisitions all supplies for the pastry shop
  • communicates with the Executive Chef and Pastry Quality Head on new recipes
  • maintains a clean and sanitary food production area according to Department of Health standards
  • performs other duties as required or assigned
