Job Requirements

  • Must be able to lift and carry up to 50 lbs

Job Qualifications

  • Three or more years of culinary leadership experience in a high-volume, full-service kitchen
  • Previous department head culinary experience preferred
  • Hotel experience preferred
  • Associates degree or higher in Culinary Arts preferred
  • Active ServeSafe Food Manager Certificate
  • Proven leadership skills with ability to delegate, train, develop, and motivate staff
  • Ability to mentor leadership positions including sous chefs and culinary supervisors
  • Ability to work well under pressure and make quick, clear decisions
  • Highly developed customer service skills
  • Ability to teach staff how to interact with guests and solve requests courteously
  • Experience training staff to maintain quality while producing high volumes
  • Excellent verbal and written communication skills in English
  • Strong food handling and presentation knowledge
  • Creativity and awareness of new food trends and concepts
  • Proficiency in Microsoft Office and payroll software
  • Basic mathematical skills and ability to understand financial reports
  • Experience managing payroll and scheduling
  • Professional business appearance and attitude
  • Flexible availability including nights, weekends, and holidays

Job Duties

  • Plan, evaluate, organize, hire, and direct the culinary team at Texas Spice including sous chefs and line culinarians
  • Ensure all departmental policies, procedures, and guidelines are followed
  • Provide necessary training, motivation, and leadership for department personnel
  • Manage efficient food and labor costs
  • Oversee equipment maintenance and safety in food service areas
  • Train and educate staff on cooking basics, organization, cleaning, food safety, and advanced culinary techniques
  • Monitor inventory and usage of china, glass, and silver
  • Handle all administrative duties vital to department function
  • Maintain cleanliness and organization of walk-in coolers, freezers, dry storage, and kitchen public areas
  • Control food safety and sanitation throughout the kitchen and provide training where needed
  • Communicate regularly with the Resort Executive Chef and Director of Food & Beverage
  • Oversee and participate in food production
  • Expedite and perform all station or line cook functions
  • Complete daily production lists and delegate duties to line staff
  • Manage sauce, stock, dressing, and butchery production
  • Ensure stations are prepared and checked for quality before service
  • Stay current with food industry trends and culinary knowledge
  • Develop recipes, conduct food cost analysis, and develop menus
  • Write and execute special function menus within budget
  • Ensure quality staff meals and maintain food prep areas
  • Ensure compliance with food safety and health regulations
  • Collaborate with other hotel departments to facilitate smooth operations
  • Foster a positive, motivating kitchen environment
  • Set priorities for Texas Spice culinary team and provide performance feedback
  • Anticipate needs, forecast results, and analyze workflows
  • Manage department payroll weekly
  • Perform other management-assigned duties
  • Assist and collaborate with other culinary outlets and banquet operations
