In addition, a new project in Hudson, upstate New York, is set to commence shortly. The Chef de Cuisine (CDC) position at Casetta presents a dynamic opportunity for a culinary leader passionate about delivering excellence in kitchen operations. The CDC is charged with leading all culinary activities at Sous Sous, one of Casetta’s premier dining establishments. This full-time role comes with an annual salary of $95,000 and offers robust benefits including 401(k) with company match, health, dental, and vision insurance, holiday pay, paid vacation, maternity and paternity leave, as well as professional development opportunities and travel perks at hotel properties.

As the head of the kitchen, the CDC is responsible for maintaining the highest standards of food quality, menu execution, and employee development while ensuring compliance with health and safety regulations. This leadership role involves overseeing labor productivity, purchasing, inventory management, recipe consistency, and financial performance to meet or exceed company goals. The Chef de Cuisine is a key figure in creating a positive and accountable kitchen culture, providing coaching and training to culinary staff, and collaborating closely with front-of-house management and event teams to ensure seamless dining experiences.

This position demands a strategic thinker with strong organizational skills who thrives in a fast-paced, creative environment. Job Qualifications

  • Five or more years of progressive culinary leadership preferred
  • Strong leadership and organizational skills
  • Food Protection Manager certification as required

Job Duties

  • Lead all kitchen operations and culinary team members
  • Recruit, train, coach and develop culinary employees
  • Conduct daily line-ups and production meetings
  • Maintain accountability and a positive kitchen culture
  • Ensure consistency in recipe execution and presentation
  • Maintain quality standards for every dish
  • Develop prep production plans and station organization
  • Coordinate with FOH leadership and events team to plan and execute all BEOs
  • Support menu development and seasonal features
  • Manage food cost, labor cost and kitchen productivity keeping in line with projected budget
  • Oversee purchasing, inventory, receiving and vendor relationships
  • Reduce waste and maximize product utilization
  • Review invoices and control kitchen expenses
  • Maintain Health Department standards
  • Ensure compliance with HACCP principles where applicable
  • Maintain OSHA compliance and safe kitchen practices
  • Ensure sanitation, temperature logs and proper food handling
  • Prepare schedules
  • Complete ordering and inventory counts
  • Maintain recipes, production sheets, training and all operational systems implemented
