The position of Chef De Cuisine at Bar Traza and Splash is a vital leadership role within the culinary team, responsible for overseeing both banquet and restaurant operations. This position demands a highly skilled culinary professional who can ensure the seamless and efficient running of the kitchen and food production. The Chef De Cuisine manages daily food production, preparation, and presentation, ensuring consistency and quality that meets Omni's high standards.
In this role, you will be responsible for supervising and developing culinary associates through scheduling, ongoing training, coaching, and performance reviews, while fostering a safe and motivating work environment. You will conduct rigorous inspections during service to maintain food quality and safety, monitor and control labor and food costs, and report on key financial metrics to support the profitability of the food service operations.
You will collaborate closely with the Resort Executive Chef on menu creation, costing, and implementation, bring leadership across multiple kitchens, and communicate effectively across different departments, including guest-facing events like pre-consultations, tastings, and site visits. Meeting deadlines, managing staffing schedules within budgetary constraints, and ensuring proper sanitation, kitchen maintenance, and compliance with health codes are essential aspects of this role.

Job Requirements
- Minimum two years culinary management experience
- Experience in upscale five Diamond kitchens preferred
- Serve Safe certified food manager or equivalent
- Basic computer literacy including Microsoft Word and Excel
- Familiarity with Kronos, Birch Street and Medallia systems
- Strong communication skills
- Ability to work flexible schedules including nights, weekends and holidays
- Excellent organizational and leadership skills
Job Qualifications
- At least 2 years of previous culinary management experience
- Prior experience in an upscale, full-service five Diamond kitchen preferred
- Excellent customer service skills with prior administrative experience preferred
- College education and/or culinary degree preferred
- Knowledge of Microsoft Word, Excel, Delphi or similar programs required
- Ability to use Kronos, Birch Street and Medallia systems
- Experience interacting with guests during tastings and special events
- Creativity in menu creation while maintaining budget
- Serve Safe certified food manager or applicable food safety certifications required
- Clear, positive, energetic communication skills both written and verbal
- Excellent organizational skills
- Ability to work flexible schedule including nights, weekends and holidays
Job Duties
- Manage the daily production, preparation, and presentation of all food for restaurant and banquets to ensure quality and consistency
- Manage associates in scheduling, training, developing, coaching, counseling, and conducting reviews while providing a safe work environment
- Inspect all food service sections during service time to maintain correct standards
- Monitor, analyze and control labor and food costs while preparing reports and schedules to meet budget goals
- Collaborate with Resort Executive Chef on menu creation, costing and implementation
- Lead and assist in multiple kitchen operations across resort outlets and banquets with strong verbal and written communication
- Participate in guest-facing meetings including pre-cons, tastings, and site visits
- Ensure deadlines are met and staff are informed of key dates and events
- Schedule staff according to budget and business forecast and review monthly profit and loss
- Oversee proper sanitation and maintenance of kitchen facilities and equipment
- Comply with EcoSure and health code standards
- Ensure kitchen equipment and walk-in coolers are properly maintained and clean
- Advise on kitchen cleanliness, hygiene, and operational standards
- Maintain control of purchasing and receiving standards working with storeroom and food and beverage controller
- Test and evaluate products for quality, yield, market price and wastage
- Provide leadership to improve Medallia food quality scores
- Check and control kitchen staff sign-in and sign-out procedures
- Perform additional assigned duties as needed
