One of Umami Riot’s standout restaurants, Bianca, embodies a vibrant blend of wood-fired cooking, craft cocktails, and warm, modern hospitality. We are currently seeking a Chef de Cuisine to lead our kitchen team at Bianca. This role requires a leader who commands the back of house with vision and executes flawlessly every service. The successful candidate will lead from the line, embodying high standards, sharp focus, and a relentless pursuit of excellence without compromise. This position has total ownership of the back of house operations, including menu execution, specials, kitchen systems, inventory management, sanitation, and service flow.
A strong business acumen is essential for this role, with an ability to manage food and labor costs thoughtfully while building sustainable systems that ensure repeatable excellence. The Chef de Cuisine will be responsible for developing sous chefs and back of house leaders through trust, accountability, and leading by example, cultivating a positive and high-performing kitchen culture. The role also demands a confident partnership with front of house leadership and the ability to calmly and professionally execute private events, maintaining brand representation with discretion and control even under pressure.

Compensation for this position ranges from $70,000 to $90,000 annually, based on experience.
