This role centers around managing daily kitchen operations within the company’s hospitality services. The successful candidate will ensure all kitchen equipment, including ovens, freezers, grills, and food processors, are maintained and fully operational to uphold food quality and safety standards. They will be responsible for delegating tasks to Sous Chefs, Specialty Cooks, Prep Cooks, and Line Cooks, coordinating meal preparation and service with precision and teamwork. Menu planning will be conducted in accordance with restaurant guidelines and seasonal availability, and they will monitor food quality and quantity served to guests. Maintaining kitchen cleanliness and safety, managing supplier relationships, and overseeing menu development, revisions, ordering, and inventory control are essential components of the role. The manager will also prepare food items following standardized recipes to ensure consistency and demonstrate expertise in a range of cooking techniques such as cutting, dicing, baking, roasting, braising, grilling, and advanced skillet and sauté work. Supervision of banquet event food preparation and creative menu development for such events will be required, making this role pivotal to the overall dining experience offered by PENN Entertainment. Job Requirements
- High school diploma or general education degree GED
- 2 years of previous high-volume culinary leadership role and or culinary degree
- Ability to multitask and problem solve
- Excellent leadership and motivational skills
- Strong knowledge of all kitchen operations

Job Duties
- Manage daily operations including maintaining kitchen equipment such as ovens freezers grills food processors ensure they are in working order to prepare food quality and safety
- Delegate tasks to sous chefs specialty cooks prep cooks and line cooks
- Coordinate with the team proficiently during all meal preparation and services
- Plan food menus as per restaurant guidelines and seasonal availabilities
- Work in coordination with the kitchen staff
- Monitor the quality and quantity of food served to guests
- Maintain kitchen cleanliness and safety
- Maintain relationships with suppliers
- Oversee menu development revision ordering and inventory control
- Prepare all food items according to standard recipes and menu to ensure consistency of products to guests
- Demonstrate knowledge of cooking techniques such as cutting dicing baking roasting braising grilling and high level of skillet saute work
- Supervise the preparation and cooking of various food items for banquet events
- Develop and implement creative menu items for restaurant and banquet events
