The role of Chef de Cuisine at Pendry is a pivotal leadership position that offers a unique opportunity to transform your culinary passion into a meaningful career. The ideal candidate will be entrusted to prepare and order all menu items while managing inventory and creating systems that maintain appropriate stock levels. Collaboration with the Executive Steward to control inventory and minimize breakage and loss of china and equipment is also essential.

This role demands expertise in maintaining food and labor costs, executing production and plating with efficiency and high standards, and supervising the kitchen team, including sous chefs and cooks. The Chef de Cuisine will be instrumental in implementing cost control and revenue enhancement strategies that maximize profitability without compromising service quality. Scheduling and staffing responsibilities, menu development with the Executive Chef, culinary innovation, and food presentation ensuring that offerings are creative, on-trend, and aligned with guest preferences are also critical elements.

Job Duties

  • Prepare and order all items for all menus, create order sheets and inventory systems to ensure proper stock levels
  • Manage inventory, control and reduce breakage and loss of china and equipment in conjunction with Executive Steward
  • Assist in maintaining overall food and labor cost through recipe costing and scheduling standards
  • Execute all production and plating efficiently and timely, exceeding guest expectations
  • Oversee daily kitchen operations including recruiting, hiring, training, and supervising sous chefs and cooks
  • Implement cost control measures and revenue enhancement strategies to maximize profitability while maintaining service quality
  • Create and maintain staffing schedules ensuring appropriate coverage
  • Oversee menu development with Executive Chef focusing on culinary innovation and food presentation aligned with guest preferences
  • Ensure compliance with all safety and sanitation policies
  • Deliver exceptional guest experiences creating WOW moments
  • Perform additional duties as assigned based on business needs
