Job Description
NYU Langone Hospital - Brooklyn is a distinguished full-service teaching hospital and a Level I trauma center situated in Sunset Park, Brooklyn. The position available is for a full-time Chef De Cuisine within the Food Service, Dietary Services department. This role entails a critical responsibility for managing and coordinating all food-related activities including requisition, forecasting, production, and distribution of both patient and non-patient food from the main kitchen production site. Reporting to and collaborating with the Executive Chef, the Chef De Cuisine will play a vital part in establishing policies, procedures, goals, and objectives related to culinary operations and catering services. The role demands leadership in creating and maintaining the NYULMC Catering Experience, which is defined by quality food, excellent service, and adherence to high standards. The work schedule for this position is Monday through Friday, from 6:00 AM to 2:00 PM, with alternating weekends. The salary range for the role is $69,071.97 to $86,257.50 annually, dependent on experience, specialty, and other factors.
The Chef De Cuisine will be instrumental in ensuring the highest quality of food preparation and presentation, maintaining compliance with The Joint Commission and federal, state, and local regulations regarding sanitation and safety standards. Their responsibilities include staff training, orientation, competency evaluations, disciplinary actions, establishing par levels for kitchen supplies, and ensuring operational efficiency. The role requires development and adherence to departmental budgets, standardized recipe creation to manage food costs, and fostering a smooth, cooperative kitchen environment. Additionally, the Chef De Cuisine is responsible for maintaining kitchen equipment and ensuring an organized, clean, and sanitary work area. This position demands exceptional communication skills to effectively liaise with the catering team and uphold NYULMC's luxury catering reputation to clients.

Job Requirements
- high school diploma
- associate's degree in food service management, culinary arts, or related field
- minimum four years of high-end catering experience
- ServSafe certification completion within first six months
- knowledge of HACCP safety, hygiene, and sanitation practices
- computer proficiency in Word and Excel
- ability to read, write, and speak English
- ability to follow verbal and written instructions
Job Qualifications

- at least four years of high-end catering experience in cold, hot, pastry, and butcher production or related hotel and/or restaurant experience
- proven records of excellence
- ServSafe certification

Job Duties
- coordinate all activities related to requisition, forecasting, production, and distribution of patient and non-patient food

- create NYULMC Catering Experience by providing quality food/service that meets standards
- manage operational aspects of culinary catering in absence of Executive Chef
- participate in selection, orientation, training, and evaluation of staff

- develop and adhere to operating and capital budgets
- create standardized recipes to control food cost
- maintain kitchen equipment and ensure cleanliness and sanitation
- ensure highest quality of food preparation and presentation
- prepare food items according to recipes
- provide clients with high quality food reflecting NYULMC luxury catering
- deliver catering dining experience in a warm and personalized manner
