We are thrilled to announce the launch of a new Cantina-themed Bar and Restaurant located inside the prestigious Thompson and Tommie Austin hotels, two premier lifestyle hotels situated in vibrant Downtown Austin. This exciting new dining concept is set to open in early Spring 2024, featuring an impressive 17,000 square feet of indoor and outdoor dining and lounge areas. The space is thoughtfully designed to include multiple venues for private events as well as a pool deck that serves both hotel guests and residents, creating a dynamic culinary destination that complements the hotels' luxurious amenities.
Thompson and Tommie Austin are renowned for their dedication to providing guests with personalized and memorable experiences. Thompson Austin boasts 212 luxury guestrooms and suites along with 17 exclusive residences, a 10,000 square foot wellness center, three distinctive restaurant and bar concepts, an expansive pool deck with private cabanas, and over 10,000 square feet of versatile event space. Tommie Austin, featuring 193 king rooms, is designed for the spirited adventurer who wishes to immerse themselves in the local culture and artistic atmosphere of Austin. Its unique offerings include a bespoke coffee and wine shop and an emphasis on delivering warm yet authentic service, allowing guests to curate their own experiences.
The new cantina-themed restaurant concept serves as a focal point for these hotels, offering an innovative 13,000 square foot indoor and outdoor oasis. The dining venue will be complemented by The Diner Bar and The Grey Market—a street-side concept that caters daily fare to locals, residents, and hotel guests, led by the award-winning Chef Mashama Bailey. Beyond dining, the entire project includes a residential tower known as Siena, 10,000 square feet of retail space, and a cutting-edge 7,000 square foot fitness center and simulator room called the "T" Box, reinforcing this mixed-use development’s status as a cultural and lifestyle hub.
The Chef de Cuisine role is a pivotal leadership position tasked with overseeing the restaurant’s kitchen and culinary team through its pre-opening phase and ongoing operations. Reporting to a Corporate liaison, the Chef de Cuisine is charged with creating, implementing, and maintaining the highest quality culinary standards that align with the Hyatt brand. This individual will monitor daily culinary operations, provide mentorship and guidance to staff, and foster a positive and productive work environment to ensure an exceptional guest experience.
This role demands a strong focus on managing food production, ordering, cost control, and quality assurance on a daily basis. Leadership responsibilities include scheduling, payroll management, coaching, training, hiring, and evaluating kitchen staff. The Chef de Cuisine will also have the opportunity to lead and mentor key culinary leadership positions, such as supervisors and sous chefs, driving a collaborative team culture aimed at outstanding guest service and employee satisfaction.

Job Requirements
- Culinary education or equivalent on the job training
- Proven experience in a similar culinary leadership role
- Strong leadership and communication skills
- Experience managing kitchen operations and teams
- Ability to work in a fast paced environment
- Knowledge of food safety and sanitation standards
- Flexibility to work various shifts including weekends and holidays
- Proficiency in basic computer applications
Job Qualifications
- In-depth skills and knowledge of all kitchen operations
- Possess strong leadership, communication, organization and relationship skills
- Experience with training, basic financial management and customer service
- Proficient in general computer knowledge
- A true desire to exceed guest expectations in a fast paced customer service environment
- Capable of producing a consistent product in a timely manner
- Strong training and communication skills
- Culinary education and/or on the job training, independent restaurant experience is preferred
- Geographic and schedule flexibility preferred
Job Duties
- Support senior leadership and Hyatt's Internal RB&E Restaurant Group by developing and assuming basic management responsibilities
- Supervise the preparation and cooking of various food items
- Develop and implement creative menu items that adhere to Hyatt brand standards
- Plan, coordinate and implement special events and holiday functions
- Manage hourly kitchen employees through scheduling, payroll, training, coaching, evaluating and hiring
- May manage other key culinary leadership roles including supervisor and other less senior sous chefs
- Lead and coach the team towards achieving exceptional guest service and employee satisfaction results
- Monitor food production, ordering, cost, and quality and consistency on a daily basis
- Ensure proper safety and sanitation of all kitchen facilities and equipment
