Job Requirements

  • High school diploma or equivalent
  • Minimum of 3 years experience in a professional culinary environment
  • Experience leading and managing a culinary team
  • Knowledge of food safety and sanitation standards
  • Ability to work in a fast-paced environment
  • Strong organizational and time management skills
  • Flexibility to work various shifts including weekends and holidays

Job Duties

  • Serve as the face of the restaurant in the hotel and community
  • Create, cost, and implement seasonal menus and special menus
  • Attract, retain, and mentor the best culinary talent
  • Complete daily ordering using current par levels for the restaurant
  • Collaborate with the restaurant manager to exceed guest expectations
  • Train the restaurant culinary and operations team on the menu and daily specials
  • Conduct daily walk-throughs of the kitchen, make recommendations for corrections, repairs, cleanliness concerns and improvements
  • Conduct daily meetings with the team to ensure their preparation and communicate all pertinent information
  • Attend weekly food and beverage meetings, leadership meetings, and monthly safety meetings representing the culinary team
  • Lead by example as the role model for the culinary team
  • Manage costs related to the restaurant, analyze, and control costs to achieve profitable operations
  • Have thorough knowledge of food allergens and handle guest food allergies with urgency
  • Ensure prep sheets are updated and properly used daily
  • Guide nightly cleaning of all kitchen areas and follow up with stewarding crew for cleanliness and organization for the next day's service
