The role of Chef de Cuisine at The Wigwam presents a unique opportunity for culinary professionals passionate about creating extraordinary dining experiences. As the Chef de Cuisine, you will be the face of the restaurant, representing both the hotel and the local community. Your responsibilities include developing and costing seasonal menus, overseeing daily food production and presentation, managing inventory and ordering, and collaborating with restaurant management to exceed guest expectations. A successful candidate will have proven expertise in crafting creative menus, handling food allergens with great care, and fostering an educational atmosphere for culinary team members. You will oversee kitchen hygiene standards, conduct daily team meetings, participate in leadership and safety meetings, and implement efficient cost control measures to maintain profitability.

Job Requirements
- High school diploma or equivalent
- Minimum of 3 years experience in a professional culinary environment
- Experience leading and managing a culinary team
- Knowledge of food safety and sanitation standards
- Ability to work in a fast-paced environment
- Strong organizational and time management skills
- Flexibility to work various shifts including weekends and holidays

- Proven experience working in a high-volume professional kitchen

Job Duties
- Serve as the face of the restaurant in the hotel and community
- Create, cost, and implement seasonal menus and special menus
- Attract, retain, and mentor the best culinary talent
- Complete daily ordering using current par levels for the restaurant
- Collaborate with the restaurant manager to exceed guest expectations
- Train the restaurant culinary and operations team on the menu and daily specials
- Conduct daily walk-throughs of the kitchen, make recommendations for corrections, repairs, cleanliness concerns and improvements
- Conduct daily meetings with the team to ensure their preparation and communicate all pertinent information
- Attend weekly food and beverage meetings, leadership meetings, and monthly safety meetings representing the culinary team
- Lead by example as the role model for the culinary team
- Manage costs related to the restaurant, analyze, and control costs to achieve profitable operations
- Have thorough knowledge of food allergens and handle guest food allergies with urgency
- Ensure prep sheets are updated and properly used daily
- Guide nightly cleaning of all kitchen areas and follow up with stewarding crew for cleanliness and organization for the next day's service
