Job Requirements

  • Proven experience in Mediterranean and/or Italian cuisine
  • culinary degree strongly preferred
  • mastery of all mother sauces and scratch cooking techniques
  • excellent organizational skills
  • ability to mentor a diverse kitchen staff
  • availability for dinner service Tuesday through Saturday
  • strong communication skills
  • creative and structured thinker

Job Duties

  • Execute a high-end, farm-to-table menu emphasizing seasonal vegetables, fresh seafood, and cured meats
  • manage scheduling, food costs, labor costs, and profit and loss
  • mentor and develop a diverse kitchen team including Spanish/English-speaking staff
  • work on the line during dinner service to ensure consistency and quality
  • maintain strict adherence to recipes, lists, and protocols
  • collaborate closely with ownership on operational decisions
  • oversee inventory and ordering to maintain kitchen efficiency
