Job Requirements
- Proven experience in Mediterranean and/or Italian cuisine
- culinary degree strongly preferred
- mastery of all mother sauces and scratch cooking techniques
- excellent organizational skills

Job Duties
- Execute a high-end, farm-to-table menu emphasizing seasonal vegetables, fresh seafood, and cured meats
- manage scheduling, food costs, labor costs, and profit and loss
- mentor and develop a diverse kitchen team including Spanish/English-speaking staff
- work on the line during dinner service to ensure consistency and quality
- maintain strict adherence to recipes, lists, and protocols
- collaborate closely with ownership on operational decisions
- oversee inventory and ordering to maintain kitchen efficiency
