Alteno Charleston is an exciting new culinary venture set to open in Summer 2026, brought to you by Fonda Fina Hospitality, a Denver-based company renowned for its dedication to exceptional dining experiences. This expansion marks the first out-of-state concept for Fonda Fina, which has already gained acclaim with its Michelin-recommended Alteno Denver that opened in March 2025. Alteno Charleston will bring the distinctive flavors and culinary heritage of Chef Johnny Curiel, a Michelin-starred chef, to the vibrant Charleston dining scene. Alongside Chef Curiel, the team includes Alteno Concept Chef Eric Honas and an innovative culinary group committed to delivering high-quality dishes paired with impeccable service and warm hospitality.

The restaurant’s menu is a tribute to the rustic dishes inspired by Chef Curiel’s roots in the Jalisco Highlands of Mexico, with a particular focus on the regional flavors of Los Altos. Alteno offers a fresh, thoughtful approach to traditional Mexican cuisine, emphasizing bold, authentic flavors and a respect for local and regional ingredients. The atmosphere at Alteno Charleston promises to be high-energy and dynamic, reflecting both the team’s passion for gastronomy and their dedication to creating a memorable guest experience.

We are currently seeking a Culinary Development Chef (CDC) to join this ambitious project. In this role, you will work closely under the leadership of Michelin-starred Chef Johnny Curiel, Alteno Concept Chef Eric Honas, and the wider culinary team to help shape and execute the restaurant’s culinary vision. Job Requirements

  • Minimum of 2 years experience in a professional kitchen
  • Familiarity with Mexican regional ingredients and cooking techniques
  • Ability to work flexible hours including nights and weekends
  • Strong work ethic and reliability
  • Demonstrated ability to adapt and learn quickly in a fast-paced environment
  • Must be a team player with a positive attitude
  • Physical ability to stand for extended periods and handle kitchen equipment safely

Job Qualifications

  • Proven experience in a professional kitchen environment
  • Strong knowledge of Mexican cuisine, particularly regional dishes from Jalisco Highlands
  • Ability to work collaboratively within a team
  • Excellent communication and organizational skills
  • Passion for culinary innovation and learning
  • Previous experience working under Michelin-starred chefs or in Michelin-recommended restaurants is a strong advantage
  • Culinary degree or relevant certifications preferred

Job Duties

  • Work under Chef Johnny Curiel and Alteno Concept Chef Eric Honas to develop and execute menu items
  • Collaborate with the culinary team to maintain high-quality dish preparation and presentation
  • Assist in sourcing and incorporating regional ingredients authentic to the Jalisco Highlands of Mexico
  • Ensure adherence to food safety and sanitation standards in the kitchen
  • Participate actively in team meetings and kitchen operations to promote a positive and productive work environment
  • Support training and development of junior kitchen staff
  • Adapt to a fast-paced, high-energy kitchen while maintaining attention to detail and quality standards
