Job Requirements
- 4 plus years of leadership experience in high volume culinary operations
- certified working Chef or equivalent degree in Culinary Arts
- shipboard experience required
- proven career progression in culinary field
- working knowledge of food and beverage products and equipment
- ability to calculate and control cost projections
- ability to write and implement menus and recipes
- leadership and teamwork skills
- ability to work under pressure
- strong communication skills
- valid passport and C1/D Seaman's visa
- complete pre-employment medical
- obtain criminal background check
- approved work shoes
- willingness to live and work onboard a cruise ship
- willingness to perform safety and emergency duties as specified by ship assembly and safety management systems
- appreciation for living in multicultural environment with shared confined cabin
Job Qualifications
- four plus years of experience working as a leader within a high level hotel or restaurant overseeing a high volume culinary operation
- certified working chef or equivalent degree in Culinary Arts
- shipboard experience required
- demonstrated career progression within the culinary field
- working knowledge of food and beverage products, services, and equipment
- ability to calculate and control cost potentials and projections
- experience writing and implementing high-quality menus based on themed and seasonal availability
- experience writing and costing recipes and training teams to implement them at high standards
- leadership skills managing multi-functional and diverse areas
- ability to work under pressure meeting tight timeframes, deadlines and financial goals
- strong written and verbal communication skills
- college degree in Culinary Arts preferred
Job Duties
- follow company recipe guidelines for assigned responsibilities using recipe booklets, plate presentation and audits
- meet food cost budgets and targets as set by the Food Manager onboard
- order stores for assigned responsibilities using the Materials Management System (MMS) for up to 3,000 meals daily
- inventory control including par levels, turnover and replenishment
- monitor handling and maintenance of operating equipment and report maintenance needs
- organize staff meetings
- provide leadership for all direct reports including managing personnel files, conducting performance reviews, ensuring MLC compliance, monitoring timekeeping system, onboard training, crew development, and crew recognition and communication
