We are currently looking for a highly skilled Chef de Cuisine (CDC) to join our culinary leadership team. Reporting directly to the Vice President of Culinary, the CDC will play a vital role in steering the culinary operations of the estate with a strong emphasis on leadership, creativity, and consistency. This position requires an independent thinker who can exercise sound judgment while managing multiple aspects of kitchen operations in a fast-paced, fine-dining setting. The role demands a commitment to maintaining the highest standards of flavor, presentation, and food safety, as well as the ability to inspire and mentor a talented culinary team to deliver exceptional tasting menu experiences.

The Chef de Cuisine will be entrusted with end-to-end ownership of various culinary projects, from conceptual development to flawless execution. This includes creating and documenting menus, recipes, and standard operating procedures (SOPs), managing inventory and ordering supplies, ensuring compliance with sanitation and safety standards, and overseeing the preparation and successful delivery of all events hosted at the estate. The CDC will foster collaborative relationships across departments and maintain strong connections with unique vendors and suppliers to source the finest ingredients. This leadership role is pivotal in shaping the evolving culinary narrative of Hundred Acre and demands attention to detail, adaptability, and a passion for elevating the guest experience.

This is a full-time, senior leadership role offering a competitive salary range of $160,000 to $185,000 plus potential annual bonuses of up to 10% of the base salary, commensurate with experience. Additional benefits include comprehensive medical, dental, and vision coverage, employer 401(k) contributions up to 3%, paid time off, staff dining privileges, opportunities for professional development, and holidays coinciding with estate closures. The ideal candidate will possess a minimum of five years of senior management experience in a Michelin-rated or equivalent fine-dining environment, strong communication and mentorship skills, and recognized certifications in food handling and sanitation. Job Requirements

  • Minimum five years senior management experience within a fine dining, Michelin rated capacity
  • Formal culinary training or equivalent experience
  • California food handler and sanitation certifications
  • Ability to lead and mentor a culinary team
  • Strong communication and interpersonal skills
  • Proficiency in scheduling, menu development, recipe development, ordering, and kitchen management
  • Ability to lift 50 plus pounds consistently
  • Experience with vendor relations
  • Capability to work independently and adapt in a dynamic fine dining environment

Job Qualifications

  • Formal culinary training or equivalent experience

  • Proven experience creating, documenting, and integrating standard operating procedures (SOPs)
  • Strong communication skills and ability to lead independently

Job Duties

  • Lead, motivate, and mentor the culinary team through daily service and ongoing development
  • Maintain the highest standards of flavor, presentation, and consistency
  • Take ownership of assigned products and projects from concept through execution
  • Develop and document menus, recipes, and SOPs
  • Oversee ordering, inventory, and maintenance of facilities and equipment
  • Ensure compliance with sanitation and safety standards
  • Lead the preparation and execution of all events and meals at estate facilities
  • Train and mentor all employees within their department and facilitate good relations with collaborating departments
  • Develop and maintain outstanding relationships with unique sources and vendors
  • Support the VP of Culinary in projects related to culinary program development
