Job Requirements
- High School Diploma or GED
- Culinary Degree or ACF Certification preferred
- Minimum eight years of progressive culinary experience
- At least three years as Kitchen Supervisor, Kitchen Manager, or Sous Chef
- Must obtain and maintain applicable State Food Handlers Certification
- Able to use knives, slicers, and choppers
- Must tolerate exposure to heat, cold, smoke, and noise
- Ability to stand or walk for extended periods
- Must obtain and maintain State or Tribal Gaming License
- Strong team building and management abilities
- Experience in food cost control and inventory management
- Experience with scheduling and staffing
- Skilled in budgeting and financial report comprehension
- Proficient with Microsoft Office and POS software
- Must be able to handle cash accurately
- Responsible alcohol service awareness
- Strong guest service and problem-solving capabilities
- Able to multitask effectively
- Willingness to train and mentor tribal members
Job Qualifications
- High School Diploma or GED or recognized equivalent
- Culinary Degree or ACF Certification preferred
- Eight years of progressive culinary experience with at least three years in a supervisory role
- Strong team building, management and coaching skills
- Demonstrated administrative skills including scheduling, coaching, and conflict resolution
- Experience with budgeting, food cost control, inventory and ordering
- Thorough knowledge of recipe preparation and execution
- Advanced knowledge of food handling procedures and commercial kitchen operations
- Current State Food Handlers Certification
- Organizational and budgeting skills with ability to understand financial reports
- Proficient in computer use including procurement, POS software, and MS Office suite
- Willingness to train and mentor Spokane Tribal Members
- Experience handling cash accurately
- Responsible alcohol service and awareness
- Strong guest service and problem-solving skills
- Ability to multitask in a fast-paced environment
Job Duties
- Ensure all 3 Peaks Restaurant staff maintain excellent standards in food preparation and guest service
- Assist Executive Chef with various managerial duties and serve as back-up when necessary
- Ensure all sanitation and safety procedures are followed in accordance with established policies
- Train and coach kitchen staff on food preparation, presentation, ordering, monthly inventory, and scheduling
- Maintain department objectives, standards, guidelines and budget to ensure proper management of department
- Purchase and monitor food purchasing, staffing, food preparation and food inventory to control food and labor cost and waste
- Hire, train, motivate, evaluate and supervise staff to ensure team members receive adequate guidance and resources
- Supervise all aspects of 3 Peaks Back of House operations including facility inspections and communicating needs
- Determine production needs, delegate tasks, and oversee completion
- Assist with product ordering, ensuring food quality and conducting end-of-month inventory
- Maintain controls for reducing and tracking waste
- Ensure quality guest service and a cheerful atmosphere
- Monitor and evaluate food preparation to ensure consistency and quality
- Develop menu changes to ensure variety and food quality
- Monitor and advise on food storage for quality and compliance
- Maintain cleanliness of all 3 Peaks areas and enforce corrective actions
- Communicate effectively including addressing issues with meal presentation and quality
- Fill in where needed within the Food and Beverage department
- Other duties as assigned
