Kettner Exchange is a renowned establishment within the hospitality industry operating under the respected SDCM Restaurant Group. Currently, Kettner Exchange seeks a highly skilled and motivated Chef De Cuisine to join its dedicated kitchen team. This role is essential to the daily operation and success of the restaurant, offering the opportunity to lead, inspire, and support a professional culinary team. The Chef De Cuisine will be responsible for maintaining high standards in food preparation, cleanliness, team coordination, and adherence to safety protocols, including the latest COVID-19 sanitary guidelines. This position is well-suited to candidates who thrive in fast-paced, upscale, high-volume restaurant environments, looking to engage in meaningful leadership and contribute to operational excellence.
The Chef De Cuisine will oversee ordering and inventory management to ensure the kitchen is stocked with quality ingredients while minimizing waste. Scheduling of kitchen staff will also be under their purview, requiring strong organizational and communication skills to balance the needs of both the team and the business effectively. Daily operations of the kitchen are a primary focus, including monitoring cleanliness and ensuring compliance with health and safety codes. The ideal candidate will maintain an environment that is consistently clean, safe, and meets regulatory standards.
Working closely with the General Manager and Executive Chef, the Chef De Cuisine will communicate regularly to track staff performance, training progress, and any issues related to service or food quality during shifts. Collaboration with the broader Food & Beverage management team is essential to align on priorities and deliver a seamless dining experience. Additional duties will include flexibility to take on tasks assigned by senior management, demonstrating a proactive and team-oriented approach.
The perfect candidate will possess a minimum of two years of experience in a Chef De Cuisine role within a bustling, upscale restaurant, capable of handling dinner service for around 350 covers. Leadership qualities, mentorship ability, and a passion for culinary arts are crucial. Physical stamina is essential, as the role involves standing for extended periods and lifting heavy items. Certification in food safety, such as a Food Handlers Card or ServSafe Certification, is required along with a preference for college or culinary school education. The role offers the chance to work in a supportive environment that values stable tenure, attention to detail, and professional growth among culinary teams.
