The role of Chef De Cuisine at Sonico is a full-time leadership position that calls for a talented, creative, and highly organized culinary professional. Reporting to the Executive Chef, the Chef De Cuisine will play a central role in overseeing all aspects of kitchen operations, from managing daily food preparation to maintaining the highest standards of presentation and consistency across all dishes. This position is ideal for someone with a deep passion for Japanese cuisine combined with the creativity to incorporate modern, global influences to keep the menu dynamic and engaging. Beyond food preparation, the Chef De Cuisine will also assume responsibility for managing inventory, food and labor costs, staff schedules, and mentoring junior kitchen team members.

Job Requirements
- Minimum of two years of experience as a Chef De Cuisine or in a similar high-volume, fine-dining environment
- Strong knife skills
- Ability to lift 50 pounds
- Ability to work in a fast-paced, high-pressure environment while maintaining a calm and positive demeanor
- Strong understanding of food safety and hygiene procedures
- Ability to stand, walk, and work for extended periods
- A valid California Food Manager Card
- Dependable, punctual, and a dedicated team player
Job Qualifications

Job Duties
- Independently manage and lead the kitchen, working under the leadership of the Executive Chef
- Prepare and execute dishes according to the Executive Chef’s recipes and specifications, maintaining exceptional standards of taste and presentation
- Ensure all food is handled and stored according to strict health and safety regulations
- Assist in menu development and the creation of new seasonal dishes under the guidance of the senior culinary team
- Manage and maintain the inventory of the restaurant, including food inventory and supply management
- Manage and maintain food and labor costs
- Manage staff scheduling
- Collaborate with other kitchen staff to ensure smooth and timely service during peak hours
- Supervise and mentor junior kitchen staff
- Monitor and maintain all kitchen equipment
- Maintain a high standard of cleanliness and organization in the restaurant
- Carry out additional responsibilities from the Executive Chef and Management team to support the restaurant’s success
