Lettuce Entertain You Restaurants, the parent company of Aba, is currently seeking a skilled Chef de Cuisine to join their team at Aba Austin. This is a full-time position offering a competitive salary range between $70,000 and $90,000 per year. The Chef de Cuisine will take on a leadership role within the kitchen, responsible for overseeing back-of-house operations to ensure efficient food preparation, quality, and inventory management. This position is integral to maintaining Aba Austin's high culinary standards, leading the team in daily operations, and partnering closely with the General Manager and other managerial staff to execute menu development, staff training, and customer satisfaction. Key responsibilities include managing food orders, inventory, inspections, menu changes, and maintaining communication between the front and back of house. The role demands a dynamic leader who can promote teamwork, provide guidance, and address challenges with professionalism and patience.

Work conditions for this position may require working various shifts, including early mornings, late nights, weekends, and may involve travel to multiple sites. Physical requirements include the ability to lift and move items of varying weights throughout the day. Job Duties

  • Lead the opening shift process including food orders, inventory and price updates
  • receiving and storage
  • overseeing inspections
  • and leading and managing menu changes
  • Lead, direct and ensure effective and efficient BOH operations including food prep and cooking
  • ensure adequate inventory levels of food and supplies
  • supervise kitchen employees
  • Provide guidance and leadership to hourly and management teams while fostering a Culture of Caring
  • Track and control food cost
  • purchase and order food product and supplies for the restaurant including daily product order
  • Partner with General Manager and/or designated managers/chefs to create prep lists throughout the day
  • assign production duties to BOH staff
  • Perform regular line checks throughout the day to ensure quality of all menu items
  • Partner with GM and/or designated managers/chefs to regularly review and maintain recipe books
  • Ensure effective communication of food production and timing issues, needs, and special requests between front of house and back of house
  • Partner with GM and management team to interview, hire, onboard, train, supervise and develop all BOH employees and teams as needed
  • Model and promote teamwork across all teams
  • Use tact and good judgment when dealing with challenges pertaining to guests, vendors and employees
  • respond with patience and courtesy
  • Work a variety of days and shifts including early mornings, late nights and weekends at multiple sites with or without overnight travel, as needed
  • Move and lift up to 10 pounds, frequently move and/or lift up to 25 pounds, occasionally move and/or lift up to 50 pounds
