The Chef de Cuisine at Stanly Ranch plays a crucial role in overseeing the culinary operations at Bear Restaurant, as well as managing culinary services at Gavel, In-Room Dining, and Halehouse Food and Beverage programs. This leadership position involves directing the preparation and execution of all food items, ensuring the highest standards of quality, creativity, and operational excellence. Responsible for maintaining Michelin-caliber cuisine, the Chef de Cuisine will work closely with the Executive Chef to bring the culinary vision to life, leading menu planning, ingredient sourcing, and kitchen management. This role requires expertise in diverse cooking styles, sustainability practices, and a collaborative spirit to foster exceptional guest experiences.
In addition to culinary excellence, the Chef de Cuisine must demonstrate strong financial and operational acumen, managing food costs, inventory, vendor relationships, and contributing to profit and loss analysis. The position demands effective team development and culture building, mentoring sous chefs and culinary staff to promote leadership and accountability within the kitchen. The role also, requires engagement with guests and front-of-house teams, ensuring seamless coordination and upholding Stanly Ranch's reputation for outstanding hospitality. This position offers a competitive annual salary of 105K and is part of the prestigious Auberge Collection, known for its portfolio of extraordinary resorts and dedication to luxury, wellbeing, and service.

Job Requirements

- Three years culinary experience in related settings
- Prior management experience preferred
- Ability to lead and manage a culinary team

Job Qualifications
- Manager ServSafe certification
- Minimum three years culinary experience in related settings
- Prior management experience preferred
- Proficiency in a wide range of cooking styles including European, American, and fusion techniques
- Experience in wood-fire cooking
- Strong leadership and team development skills
- Knowledge of food cost control and general food and beverage operations
- Ability to interpret financial reports
- Skilled in training and development
- Proficient in Google Suite and computer-based tools
- Strong problem-solving, decision-making, and communication skills
- Ability to work under pressure and prioritize tasks effectively

Job Duties
- Lead menu planning and innovation for Bear Restaurant and other outlets showcasing Napa Valley's farms and foragers
- Champion ingredient traceability and sustainability in sourcing
- Oversee daily execution of food preparation ensuring Michelin-caliber consistency
- Partner with front-of-house managers on menu printing, dining standards, and pre-service activities
- Collaborate on holiday menu development for special occasions
- Manage Gavel products to meet brand and seasonal standards
- Maintain and update in-room dining menus and lead food safety protocols
- Direct back-of-house operations including prep, mise en place, and kitchen systems
- Manage food cost control, inventory, vendor relationships, and purchasing
- Support financial planning, equipment maintenance, and regulatory compliance
- Recruit, train, and mentor culinary team fostering excellence and collaboration
- Lead daily tastings, pre-service meetings, and team education
- Maintain active leadership presence during service to support FOH and guest engagement
- Represent Bear and Stanly Ranch culinary program at industry events and press features
