Fairmont New Orleans, an exciting new addition to the Fairmont luxury portfolio, is situated in the heart of downtown New Orleans. This flagship property will feature 250 luxury guest rooms, four distinguished food and drink venues, a breathtaking rooftop pool offering panoramic views of the city, more than 19,000 square feet of versatile function space, and a 10,000-square-foot spa. The Chef de Cuisine at Fairmont New Orleans plays a pivotal role in maintaining and enhancing the hotel’s reputation for culinary excellence. Reporting to the Executive Chef and working closely with the executive leadership team, this position is responsible for the overall management and leadership of the kitchen operations across multiple dining outlets including The Café by Emeril, Delmonico Steakhouse, and The Lobby Bar. The role demands a high level of culinary expertise, operational management, and team leadership to ensure that every guest enjoys exemplary food quality and service.
Key responsibilities include overseeing menu development and execution, managing purchasing and labor costs to meet budget requirements, and ensuring compliance with health and safety regulations. The Chef de Cuisine leads a diverse culinary team, including Sous Chefs and a Pastry Chef, providing mentorship, training, and motivation to uphold the highest standards in food preparation and presentation. The position also requires managing inventory controls, minimizing waste, and reviewing financial performance metrics such as profit and loss statements.
This role demands excellent organizational skills, the ability to perform under pressure, and a passion for elevating the guest dining experience. The Chef de Cuisine will be engaged in continuous improvement efforts, including participating in guest interactions and leveraging feedback to refine service delivery. In addition, the role involves ensuring a clean, safe, and compliant kitchen environment consistent with local laws and company policies.

Job Requirements
- High school diploma or equivalent
- Several years of culinary experience in progressive back-of-house positions
- Familiarity with food safety and sanitation regulations
- Ability to work long hours, including weekends and holidays
- Strong leadership capabilities
- Excellent communication skills
- Ability to physically perform kitchen duties
- Commitment to maintaining high standards of cleanliness and safety
Job Qualifications
- Demonstrated understanding and application of basic mathematical principles including percentages and cost calculations
- Proven expertise in all back-of-house culinary positions and operations
- Excellent written and verbal communication skills
- Strong leadership and problem-solving abilities

Job Duties
- Collaborate with the Executive Chef to develop kitchen SOPs and ensure equipment and sanitation standards
- Oversee soft and grand openings to evaluate service and quality
- Maintain composure during high-pressure opening environment including extended hours
- Maintain highest standards of food quality, presentation, consistency, and execution
- Lead menu execution and contribute to development including specials
- Ensure food prepared in accordance with safety regulations and timelines
- Supervise and develop culinary team ensuring adherence to recipes and standards
- Expedite service for timely and accurate dish delivery
- Routinely taste and evaluate food for freshness
- Manage food and labor costs to meet budget targets
- Maintain accurate inventory controls and minimize waste
- Oversee ordering and receiving ensuring product quality
- Review monthly financial performance with Executive Chef
- Ensure accurate payroll and timekeeping practices
- Lead and inspire Sous Chefs, Pastry Chef, and back-of-house colleagues
- Manage recruitment, onboarding, training, and development of culinary team
- Create and manage staffing schedules for efficiency
- Conduct performance evaluations and coaching
- Partner with People & Culture for disciplinary procedures
- Foster respectful and inclusive work environment
- Support front-of-house and engage guests for exceptional dining experience
- Conduct table visits and respond to feedback to improve service
- Build loyalty through guest relationships
- Ensure cleanliness and maintenance of back-of-house
- Enforce food safety, sanitation, and health regulations
- Conduct safety training and promptly handle concerns
- Complete incident and food safety reports timely
- Monitor product handling including temperature and storage
- Maintain and address kitchen equipment operational concerns
