Job Requirements
- High school diploma or equivalent
- Two to five years of culinary or kitchen management experience
- Ability to adhere to HACCP guidelines
- Knowledge of food safety and sanitation standards
- Strong leadership and personnel management skills
- Ability to work in high volume culinary production environments
- ServSafe certification
Job Qualifications
- A.O.S. degree in culinary arts or culinary certificate preferred
- Three to five years of culinary experience preferred
- Minimum two to five years of culinary or kitchen management experience depending on formal degree or training
- Catering experience
- Knowledge of food and catering trends focusing on quality, production, sanitation, food cost controls, and presentation
- Batch cooking or high volume cooking experience preferred
- Experience in food production for large catering or banquet functions
- ServSafe certified
Job Duties
- Oversee culinary production under the direction of the Executive Chef
- Serve as department head for culinary operations in the absence of Executive Chef
- Adhere to HACCP guidelines for food safety and sanitation
- Assist in menu development and inventory management
- Participate in ordering and purchasing processes
- Manage food cost controls
- Train, counsel, coach, and develop culinary personnel including hiring and firing
