The Chef de Cuisine actively collaborates with the Executive and Banquet Chefs in developing menus and recipes that reflect both creativity and the club's quality standards. Key responsibilities include managing kitchen staff schedules, motivating the team, and ensuring compliance with sanitation and safety protocols. This role also involves monitoring food and beverage inventory, controlling food costs, and contributing to budgeting and financial planning to maximize operational efficiency. The Chef de Cuisine must demonstrate strong leadership and organizational skills, ensuring all culinary efforts align with the club's objectives and member expectations. Additionally, the position requires readiness to assume the Executive Sous Chef’s responsibilities during their absence and the ability to respond effectively to any emergencies or safety situations within the club. This is a full-time role that demands a combination of culinary expertise, management acumen, and a passion for delivering outstanding dining experiences in a luxurious club setting.
Job Requirements
- Reading, writing and oral proficiency in the English language
- High school graduate
- 5 to 8 years experience in hotels or similar facilities
- Must have full knowledge of cooking and presentation of food for all kitchen departments
- Must have full knowledge of sanitation requirements in handling food
- Strong leadership, training, communication and organizational skills
Job Qualifications
- High school diploma or equivalent
- Proven experience as a Chef de Cuisine or similar role in hotels or upscale dining establishments
- Comprehensive knowledge of culinary techniques and kitchen management
- Ability to develop creative menus and oversee recipe development
- Strong leadership skills with experience in personnel training and performance evaluation
- Excellent organizational and communication abilities
- Familiarity with food safety standards and cost control measures
Job Duties
- Oversee daily kitchen operations and ensure smooth, efficient service
- Train, supervise, motivate, and organize all kitchen staff
- Coordinate employee schedules, approve leave, and promote a positive work environment
- Assist in staffing the kitchen in alignment with budgeted labor targets
- Participate in employee performance evaluations and disciplinary actions
- Develop innovative menus, daily specials, and recipes in collaboration with Executive and Banquet Chefs
- Ensure all menu items are prepared to quality standards and ready for service
- Expedite the kitchen during service ensuring compliance with Shady Canyon Golf Club standards
- Assist with food and beverage inventory management
- Monitor and control food costs to meet financial goals
- Support the Executive Chef in budgeting, forecasting, and cost planning
- Assume the responsibilities of the Executive Sous Chef in their absence
- Respond properly in any club emergency or safety situation
- Perform other tasks or projects as assigned by club management and staff
- Employee may perform other related duties to meet ongoing needs as requested by supervisor
