Job Requirements
- Minimum 2 years of Chef experience
- Proven expertise in sushi preparation
- Ability to manage kitchen operations
- Strong leadership and communication skills
- Willingness to work flexible shifts including weekends and holidays
- Capability to lift and move up to 50 pounds
- Commitment to upholding food safety and quality standards
Job Qualifications
- 4+ years of Chef de Cuisine experience in a full-service restaurant
- Strong knowledge of sushi preparation, fish butchery, and Japanese culinary techniques
- Ability to lead and develop teams
- Skilled in managing BOH systems
Job Duties
- Lead the opening shift process including food orders, inventory and price updates
- Receive and store supplies and oversee inspections
- Lead and manage menu changes
- Lead and direct BOH operations including food prep and cooking
- Ensure adequate inventory levels of food and supplies
- Supervise kitchen employees
- Provide guidance and leadership to hourly and management teams while fostering our Culture of Caring
- Track and control food cost
- Purchase and order food product and supplies
- Partner with General Manager and/or designated managers/chefs to create prep lists and assign production duties
- Perform regular line checks to ensure quality
- Review and maintain recipe books
- Communicate food production and timing issues between FOH and BOH
- Interview, hire, onboard, train, supervise and develop BOH employees and teams
- Model and promote teamwork
- Respond with patience and courtesy to challenges
- Work a variety of shifts including early mornings, late nights and weekends
- Move and lift up to 50 pounds as needed
